Filipino Cheese Bars

These perfectly balanced sweet and salty Filipino Cheese Bars are so easy to prepare and can be enjoyed as a snack, dessert or side dish.

- 2 cups all purpose flour
- ¾ cup sugar
- ¾ cup unsalted butter room temperature
- 1 teaspoon vanilla extract
- 2 large eggs room temperature
- ½ cup condensed milk
- ¼ teaspoon salt
- 1 cup shredded cheddar cheese or more for toppings
Preheat oven to 350F and lightly grease a 9×13 inch baking pan. Line the pan with parchment paper.
In a bowl, beat butter and sugar on medium setting until light and fluffy.
Add eggs one at a time, beat until fully incorporated.
Stir in condensed milk and vanilla extract until well blended.
Add ½ of the flour and mix. Add remaining of the flour and mix again until everything is well combined. Don't over mix.
Add in ¾ cup of cheese and mix until evenly distributed. The batter should have a thick consistency.
Transfer the batter to a baking pan and spread evenly. Top with the remaining cheese and more if needed.
Bake for 20-25 minutes or until the edges of the bars turns golden brown and a toothpick inserted comes out clean.
Let it cool for 10 minutes before slicing. Serve and enjoy!
- Total yield depends on how big or small you slice your bars.
- Feel free to add more cheese if you like
- The cheese bars batter is thick, could be difficult to use hand. I suggest you use handheld electric mixer or stand mixer.
- For the cheese, you can use cheese grater or you could buy pre-shredded cheese (store-bought)
