Shrimp Yaki Udon

  • 400 grams udon noodles
  • 3 tablespoon oil
  • 1 medium red onion
  • 4 cloves garlic minced
  • 1 large carrots peeled and julienned
  • 1 cup cabbage shredded
  • 10-12 pieces shrimp
  • salt and pepper
  • spring onions toppings
  • toasted sesame seeds toppings

Sauce

  • 2 tablespoon soy sauce
  • 2 tablespoon oyster sauce
  • 3 tablespoon worchestire sauce
  • 1 tablespoon brown sugar
  • salt and pepper to taste
  • chili flakes optional

Instructions
 

  • Boil the udon noodles according to the package instructions. Drain and rinse with cold water. Drizzle some oil and set aside.
  • In a small mixing bowl, combine soy sauce, oyster sauce, worcestershire sauce and sugar. 
  • In over medium heat pan, drizzle oil. Sautè onion for 2-3 minutes until translucent. Add garlic and stir for another minute.
  • Add veggies; carrots and cabbage and cook for 2-3 minutes until soft and tender. Season with salt and pepper. Set aside.
  • In the same pan, after veggies are cooked. Add additional 2 tablespoon oil and fry the shrimp. Add pinch of salt. Cook for 2-3 minutes both sides.
  • In the same pan, add udon noodles. Pour in sauce. Pan fry for 2-3 minutes until sauce is well coated.
  • Add back veggies and toss until combine.
  • Top with scallions and toasted sesame seeds. Serve and enjoy!

Notes

  • Udon: The best udon noodles come in airtight, vacuumed sealed packages in the produce section of your grocery store. Any brand works fine.
  • Shrimp: any sizes works fine about 12-15 pieces or more.
  • Onion: you can use white or red onions.
  • Soy Sauce: since I couldn't find dark soy sauce anywhere. I used low sodium soy sauce instead. If you have dark soy sauce then that's great but if none then no big deal. Dark soy sauce adds more colour for Udon.
  • Oyster Sauce: for umami flavours.
  • Worcestershire Sauce: that sour and tangy flavour for extra kick.
  • Sugar: white or brown works great. You can use honey as well. This balances the sauce.
  • Vegetables: cabbage and carrots. You can also add snow peas If you like.
