Filipino Pork BBQ Skewers

Filipino Pork BBQ Skewers are one of the most famous foods in the Philippines. Tender pieces of pork marinated with the secret ingredients, 7-Up (Sprite) and Banana Ketchup, create a sweet and savoury taste that the whole family will enjoy.

Ingredients
  

  • 3 lb pork sliced into 1 inch cubes
  • 1 cup 7-up
  • ½ cup banan ketchup
  • 1 cup brown sugar
  • ¼ cup oyster sauce
  • 1 cup datu puti soy saue
  • ½ cup datu puti vinegar
  • ½ cup garlic minced
  • 1 teaspoon lemon juice
  • 2 teaspoons black pepper
  • 16 pieces bamboo skewers

Oyster Banana Glazed

  • ¼ cup banana ketchup
  • 2 tablespoon oyster sauce
  • 1 teaspoon sesame oil

Instructions
 

  • Cut pork into 1 inch cubes and pat dry.
  • Prepare sauce by mixing banana ketchup, 7 up, soy sauce, vinegar, oyster sauce, brown sugar, garlic, lemon juice and black pepper in a large bowl.
  • Stir in pork and massage to fully incorporated. Cover with saran wrapper and marinate the meat for 6-8 hours or overnight in refrigerator.
  • Soak bamboo skewers with water for 30 minutes before assembling pork skewers.
  • Assemble BBQ by threading about 5 pieces of pork onto bamboo skewers alternating fattier and leanier.
  • In a small bowl, combine the banana ketchup, oyster sauce, and sesame oil and mix thoroughly. This is our oyster banana glaze and set aside.
  • Grill pork BBQ skewers over preheated grill for about 4-5 minutes each side. When pork starts to turn pink brush with oyster banana glaze. Continue to grill and baste, turning on sides, until meat is cooked through.
  • Remove from heat and served over rice with spicy vinegar dip.

Notes

Tips and Notes
  • soak bamboo skewers with water for 30 minutes before assembling to prevent them from burning the stick.
  • marinating the pork overnight gives more depth flavour, so I suggest to leave the pork overnight in refrigerator.
  • in the Philippines we always use charcoal for grilling make sure to preheat the grate before grilling so the pork won't stick.
  • you can substitute 7 up with sprite and banana ketchup is a must for this recipe.
