In a medium bowl, add grated carrots, squash, potato, chopped cilantro, onion and garlic. Mix them together until fully distributed. Use hands to mix everything.
SEASONINGS
Add salt and pepper to the mixture. Add vegetarian oyster sauce (optional) and mix everything together.
ASSEMBLING THE SIOMAI
To form the siomai, remove 1 wonton wrapper from the package. Brush the edges of the wrapper lightly with water. Place ½ rounded teaspoon of the vegetable mixture in the centre of the wrapper then gather sides to form a "cup''. Repeat procedure until all of the filling is gone.
COOKING METHOD
Using a steamer apparatus of your choice, bring ½ inch of water to a simmer over medium heat. Slightly grease the tray/basket with oil and arrange the siomai in a single layer. Steam for 15-20 minutes. Gently remove from the heat and serve with chili oil sauce.
