Scallion and Ginger Oil

Scallion Ginger Oil is a versatile condiment that can be used in variety of dishes. It adds aromatic flavours and great way to use up extra scallions and ginger that you may have on hand.

- 8-10 stalks scallions/green onion thinly sliced
- 3 tablespoon ginger peeled and grated
- ¾ cup neutral oil canola, vegetable or grape
- ¾ teaspoon salt adjust according to desired taste
- 2 pieces star anise
Wash the scallions and pat them thoroughly dry. Thinly cut them into rounds, and then use your knife to mince them further.
Wash ginger and peel them. Grate ginger using grater.
Transfer scallions and ginger into heating proof bowl. Season with salt then mix well.
In a small pan or saucepan, add oil and star anise. Heat in high heat for 3-4 minutes or until a piece of scallion sizzles. Turn off the heat.
Remove the star anise then carefully pour oil over scallion and ginger. Mix them well.
Let them cool completely then transfer to a jar.
- to chopped scallion and ginger finely will allow them to release the flavour to the oil. This will gives fragrant and more flavourful oil.
- Use a sharp knife or you can use food processor. Make sure to remove white stems and discoloured parts of scallions.
- use fresh ingredients for deep and bold flavours.
