Ingredients
  

  • 454 grams ground chicken
  • ¼ cup soy sauce
  • 3 tablespoon vinegar
  • 3 cloves garlic minced
  • 1 small onion chopped
  • 1 thumb-sized ginger crushed
  • 2 pieces bay leaves
  • ½ teaspoon whole peppercorns
  • 1 pinch sugar
  • 1 cup corn canned
  • 1 cup black beans canned
  • 1 piece cucumber chopped
  • 1 avocado chopped
  • 1 tomato chopped
  • cilantro chopped
  • rice cooked
  • salt and pepper

How to cook Chicken Adobo?

  • In over medium heat pan, add oil. Sauté onion,garlic and ginger.
  • Add ground chicken and stir for 2-3 minutes.
  • Stir in soy sauce, vinegar, whole peppercorns and bayleaves. Add little bit of sugar. Cook for 10 minutes or until meat is cooked. 

How to assemble chicken adobo burrito?

  • To assemble, simply add cooked rice, chicken adobo, corns, black beans, cucumbers, tomatoes, avocado and cilantro.
  • Add sriracha sauce for extra spicy.

Notes

  • You can make vegan or vegetarian adobo burrito bowls by using tofu or eggplant.
  • You can substitute white rice to brown or cauliflower rice.
  • Skip sriracha sauce if you don't want spicy.
  • The ingredients and measurements are simply suggestions. Feel free to add or swap any ingredients you want.
