Adobo is a Filipino term meaning "marinade". Adobo tastes like an earthy blend of classic savoury flavours. It has sweet and tangy flavour that makes the dish more appealing. Adobo sauce is made with soy sauce, vinegar, sugar, whole peppercorns, ginger and bay leaves.

INGREDIENT NOTES
- Chicken: ground chicken is used for this recipe. You can also use ground turkey. Chicken thighs (finely chopped) would also work for this recipe.
- Veggies: cucumber, tomatoes, avocado, corns, cilantro and black beans. Feel free to change and add more vegetables.
- Adobo Spices: soy sauce, vinegar, sugar, bay leaves, ginger, garlic and whole peppercorns.
- Sauce: Sriracha for extra spicy.
- Rice: we are using white rice however you can use brown rice as well.
STEP-BY-STEP INSTRUCTIONS
Step 1: Cook Chicken Adobo
In over medium heat pan, add oil. Sauté onion, garlic and ginger. Add ground chicken and stir for 2-3 minutes. Stir in soy sauce, vinegar, whole peppercorns and bayleaves. Add little bit of sugar. Cook for 10 minutes or until meat is cooked.
Step 2: Assembling Chicken Burrito Bowls
In a bowl, add cooked rice, chicken adobo, corns, cucumbers, tomatoes, black beans, avocado and cilantro. You can also add sriracha for extra spicy.

Ingredients
- 454 grams ground chicken
- ¼ cup soy sauce
- 3 tablespoon vinegar
- 3 cloves garlic minced
- 1 small onion chopped
- 1 thumb-sized ginger crushed
- 2 pieces bay leaves
- ½ teaspoon whole peppercorns
- 1 pinch sugar
- 1 cup corn canned
- 1 cup black beans canned
- 1 piece cucumber chopped
- 1 avocado chopped
- 1 tomato chopped
- cilantro chopped
- rice cooked
- salt and pepper

- You can substitute white rice to brown or cauliflower rice.
