What is Pompano?

Pompano is a culinary delight, known for it's firm texture and delicate taste. Firstly, what separates Pompano from all the other fish out there? Pompano refers to several species of fish, chiefly found in warm tropical waters around the world.

It has a mild, sweet flavor, and the texture of the meat is tender. Conveniently, the fish is highly versatile for chefs and food aficionados, therefore it can be grilled, baked, broiled, fried, and steamed.

Popular ways to prepare Pompano include grilling the whole fish with simple seasonings, or pan searing filets with butter and herbs. You can also bread them and fry them for a crunchy soul food.

Like many other type of fish, you get lots of protein and omega 3 fatty acids, along with vitamins and minerals.

Ingredients Needed

Here are the ingredients needed for Steamed pompano in ginger soy sauce based.

  • Golden Pompano: Choose fresh pompano fish (whole fish) with clear, bright eyes and firm flesh. Ensure the fish is properly cleaned and scaled before cooking.
  • Green onions: This contributes a mild onion flavor.
  • Ginger: Fresh ginger adds a subtle spiciness.
  • Soy Sauce: Umami flavor, for less sodium use light soy sauce.
  • Oil: Vegetable or canola oil.
  • Garnish: Cilantro and scallions.

How to make it

Step 1. Clean fish. Wash with cold water and pat dry with paper towels. Use a pair of scissors to cut at the belly, gut and remove all the innards and gills.

Place the slices of ginger and green onions inside the cavity of the fish. Season fish with salt and black pepper.

Step 2. Prepare the Steamer. Fill the bottom pan of a steamer rack with water and bring it to a boil over medium heat.

Place fish on the steaming plate top with ginger slices and white part of green onions. Steam for about 10-15 minutes.

Quick Tip: Lightly grease a heat-proof plate or dish with cooking oil to prevent the fish from sticking.

Step 3. Add the Hot Oil. Heat oil over high heat in small saucepan and pour hot sizzling oil over fish.

Step 4. Mix Soy Sauce. In a small bowl, combine soy sauce and sugar. Add soy sauce over steamed fish. Garnish the steamed pompano with fresh cilantro and scallions.

Serving & Storing

Serve easy steamed pompano with hot steamed rice and your favorite vegetables.

Store cooked pompano in an airtight container in the refrigerator for up to 3 days.

Ingredients
  

  • 1 medium size whole Pompano  cleaned and gutted
  • 1 bunch green onion  2-3" in length, save some thinly julienned for toppings. White parts place inside the cavity
  • 1 piece ginger peeled and thinly sliced
  • 2 tablespoon vegetable oil high smoke-point
  • 3 tablespoon soy sauce light soy sauce (low soduim)
  • ½ teaspoon sugar
  • salt and black pepper to season fish

Instructions
 

  • Ensure the fish is properly cleaned and scaled before cooking. Use a pair of scissors to cut at the belly, gut and remove all the innards and gills.
  • Soak in a bowl of water for a few minutes to make sure all blood is removed.
  • Season the cleaned pompano fish generously with salt and pepper, stuff the cavity with sliced ginger and white parts of green onions.
  • Place the fish in a lightly grease heatproof steaming plate or dish to prevent the fish from sticking. Top with more ginger slices and green onions.
  • Carefully place the steaming plate with the fish into the steamer basket filled with water. Cover the steamer with a lid. Steam for about 10-15 minutes, depending on the size of the fish. Remove plate from the steamer.
  • Garnish additional julienned scallions, ginger and cilantro on the fish.
  • In a saucepan, heat oil until smoking hot. Pour over over top of the scallions/green onions on the pompano fish.
  • In a small bowl combined soy sauce and sugar. Pour the mixture over the fish.
  • Serve with hot steamed rice and enjoy.
