    What is Pancit Guisado?

    Pancit Guisado, also known as Pancit Canton is a popular stir-fried noodle dish in Filipino cuisine. "Pancit" is a Filipino term that refers to noodles, while "Guisado" means stir-fried.

    Filipino Pancit Canton typically consists of wheat or egg noodles stir-fried with a variety of ingredients, such as meat, seafoods or vegetables, and some seasonings.

    What type of noodles to use?

    The traditional and most commonly used noodles for Pancit Canton Guisado are the yellow egg noodles called "Canton noodles. These noodles are made from wheat and egg giving them a yellowish color and a slightly chewy texture when cooked.

    Canton noodles can be found in Asian or Filipino Stores, both fresh and dried. Most grocery stores will also have them. Fresh noodles typically have a shorter cooking time and may require less soaking, while dried noodles need to be soaked in water a little longer to soften.

    Note: If you decide to use dried noodles like in the picture below, please check this vegetarian pancit canton recipe. This provides specific instruction on cooking with dried noodles as opposed to fresh.

    If Pancit Canton Noodles are not available, you can also substitute it with Lo Mein noodles. They are quite similar texture.

    Ultimately though, the choice of noodles of Pancit Guisado depends on personal preference and availability. Feel free to experiment with different types of noodles and add with some of your favourite veggies.

    Ingredients

    Here are the lists of ingredients in making the best Pancit Canton recipe.

    • Veggies: for the vegetables we are using green cabbage, carrots and green beans.
    • Garlic: we need about 3 cloves of garlic.
    • Onion: red, white or yellow works fine.
    • Fish Balls: I love fish balls, it adds more flavor to the dish.
    • Pork: We are using sliced pork belly.
    • Noodles: I am using Fresh Canton Noodles. You can also use dried Pancit canton.
    • Sauce: soy sauce, oyster sauce, chicken broth.

    How to make it

    1. Brown pork, stir fry veggies and fry fish balls.
    • Brown pork until crispy and no longer pink.
    • In the same pan, stir in carrots, green beans and cabbage. Set it aside.
    • Fry fish balls in separate pan, once cook set it aside for toppings.

    2. Cook Noodles

    • In a pan, add pancit canton sauce and bring it to boil.
    • Toss noodles and don't over cook.
    • Stir in cooked veggies and top with fried fish balls.
    • Remove the noodles from the heat. Serve and enjoy!

    Key Tips

    • Prep all the ingredients including veggies and meat beforehand.
    • Cut veggies in uniform size. I suggest to cut meat into smaller pieces as they cook quicker.
    • This recipe uses fresh pancit canton noodles, means shorter time cooking needed.
    • Dry Noodles tend to absorb liquid quickly (please check recipe here for dry noodles). When cooked, they soak up the sauces and seasonings, which adds flavor and prevents from being bland. Please make sure to add more broth if needed.
    • You can use snow peas or snap peas instead of green beans.
    • Adjust seasonings based on your personal taste preferences.

    Can I use fresh instead of dried noodles?

    Yes, you can use fresh noodles as a substitute for dried Pancit Canton noodles. Adjust the cooking time accordingly to prevent overcooking the noodles as fresh requires less cooking time.

    Can I use different vegetables?

    Absolutely, Canton Guisado is a versatile dish, and you can use a variety of vegetables based on your preference.

    Can I add more meat or seafood?

    Sure! Feel free to add your favourite meat like chicken or beef. For seafood, you can also add shrimps or squid balls.

    Store

    Store them in an airtight container in the refrigerator. Pancit Canton Guisado can be reheated in a pan or microwave.

    Pancit Canton Guisado Recipe

    Ingredients
      

    • 500 grams fresh canton noodles
    • 1 medium carrots julienned
    • ½ head cabbage shredded
    • ½ cup green beans sliced diagonal
    • 1 medium onion chopped
    • 3 cloves garlic minced
    • 1 lb. pork thinly sliced
    • 6 pieces fish balls cut into halves
    • 2 tablespoon oil

    For Stir frying Veggies

    • 1½ tablespoon soy sauce
    • 1 tablespoon oyster sauce
    • ¼ cup water

    To Cook Noodles

    • 1 cup water
    • 1 teaspoon chicken powder
    • 1 tablespoon soy sauce
    • 1 tablespoon oyster sauce
    • ½ teaspoon brown sugar
    • salt and pepper to taste

    Instructions
     

    • In a skillet, heat oil over medium heat. Fry the fish balls until cooked and lightly browned. Remove from oil and set aside.
    • In over medium heat pan, add 1½ tablespoon of oil and fry pork until tender. Push pork to the side and sauté half of onion and garlic until fragrant.
    • Stir in carrots and green beans. Stir for 2 minutes. Pour in water, soy sauce and oyster sauce and bring it to simmer. Once simmer, add cabbage and cook for another few minutes. Set it aside.
    • In the same pan, add ½ tablespoon of oil. Sautè the remaining onion and garlic. Pour in chicken broth (See Note 1), soy sauce, oyster sauce and brown sugar and bring it to simmer.
    • Toss the fresh noodles (For Dry Noodles, See Note 2.) into the pan with the sauce and stir-fry until the noodles are well-coated with the sauce and heated through. Be gentle to avoid breaking the noodles. Season with salt and pepper as needed.
    • Add back the meat and vegetables and the fish balls. Transfer the Pancit Canton Guisado to a serving platter.
    • Serve hot with calamansi wedges on the side. Squeeze calamansi juice/lime over the noodles before eating for a tangy flavor.

    Notes

    • Note 1. Dissolve 1 teaspoon of chicken powder with 1 cup hot water.
    • Note 2. Dry Noodles tend to absorb liquid quickly (please check recipe here for dry noodles). When cooked, they soak up the sauces and seasonings, which adds flavor and prevents from being bland. Please make sure to add more broth if needed.
