What is Afritadang Manok?
Afritadang Manok is also known as "Chicken Afritada". A popular Filipino chicken stew simmered in tomato-based sauce, along with mixed vegetables like potato, carrots, bell peppers.
It's a flavourful and hearty dish enjoyed in Filipino households and often served for special occasions like Christmas, Birthdays and Fiestas.
This is probably one of my favourites, it's so easy to make! I remembered my Mother would always make this dish whenever there's a birthday in the family. Her version is quite different as she added some pineapple chunks for sweetness.
I like mine without pineapple but the great thing about this dish is you can customized it to your tastes.

How to make Afritadang Manok
Step 1. Sear the Chicken.
Season with salt and pepper.
Add the chicken pieces to the hot oil and brown them on all sides and set aside.
Step 2. Simmer tomato sauce.
In a cooking pot sautè onion and garlic.
Pour in tomato sauce, broth, oyster sauce, sugar, bay leaves, salt and pepper. Add then place back the seared chicken.
Step 3. Add vegetables.
Stir in potatoes and carrots and simmer 15 minutes or until cooked and veggies are tender. Add bell peppers and cook for another few minutes. Season if needed.
What to serve with Chicken Afritada
The most common and classic accompaniment of Chicken Afritada recipe is Steamed Rice. I mean, who doesn't love rice, right? This can go with fried rice like sinangag and garlic butter fries rice.
Store
To store leftovers, allow them to cool completely first. Once cooled down, transfer them to an airtight containers and store in refrigerator for 3-4 days.
To freeze them transfer in freezer-safe container and freeze up to 3-4 weeks.

Afritadang Manok (Chicken Braised in Tomato Sauce)
Ingredients
- 2 lbs. chicken bone in
- 2 tablespoon oil
- 1 medium onion sliced
- 2 cloves garlic minced
- 1 large carrots peeled and cubed
- 1 large potato cubed
- 1 red bell peppers cubed
- 1 cup tomato sauce
- 1 cup water
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 2 pieces bay leaves
- salt and pepper to taste
Instructions
- In a bowl season chicken with salt and pepper. Mix until combined.
- In medium heat cooking pot, add oil. Add the chicken pieces to the hot oil and brown them on all sides and set aside.
- In the same cooking pot, sautè onion and garlic until aromatics. Add tomato sauce, bay leaves, water, oyster sauce, sugar, salt and pepper to taste. Let it simmer in few minutes. Add chicken back to the pot.
- Add potatoes and carrots. Cover the lid and simmer for 15 minutes or until chicken is cooked and veggies are tender. Add bell peppers and cook for another 2 minutes. Season with salt and pepper if needed.
- Serve with rice and enjoy!
