    What is Adobo?

    Adobo derived from the Spanish word Adobar, meaning ''marinade''. Marinating meats in soy sauce, vinegar, garlic, peppercorns, ginger and sugar, easy homemade adobo seasoning. Filipino Adobo sauce quite similar to Spanish sauce.

    Ingredients Needed

    • Chicken: The main ingredient, we are using chicken breast fillets. However you can use boneless skinless chicken thighs, or ground chicken as well. Shred chicken or cut into bite-sized pieces.
    • Adobo sauce: For best flavor adobo marinade you need: soy sauce, oyster sauce, vinegar, bayleaves, peppercorns and sugar(white or brown sugar).
    • Tortillas: You can use corn tortillas or flour tortillas.
    • Sauce: chipotle mayo, sour cream and hot sauce (optional).
    • Toppings: onion (red, white or yellow onion), tomato, shredded cheese and fresh cilantro (optional). You can also add avocado slices, and a squeeze of lime juice.

    How to make Adobo Chicken Tacos

    Step 1: Marinade Chicken and Prepare Adobo Sauce. In a large bowl, mix soy sauce, oyster sauce, vinegar, bayleaves, peppercorn and sugar. Add boneless chicken breasts, toss and massage to coat the chicken pieces with the sauce. Marinate for 2-4 hours.

    Step 2: Cooking Chicken. In over medium-high heat pan, add olive oil. Add garlic and ginger. Sautè for a minute. Add in chicken, season with black pepper and cook for 3-4 minutes until slightly golden brown.

    Step 3: Add remaining adobo sauce. Stir in adobo sauce. Cook and simmer for 5-8 minutes until the meat is cook through.

    Step 4: Serve. Warm tortillas according to package directions. Add shredded chicken adobo and top with your favorite taco toppings like red onion and cilantro. Drizzle with chipotle mayo, sour cream and sriracha for spicy kick (optional).

    This chicken adobo is perfect for meal prep! Here are some of my favourite ways or ideas to serve it:

    • Chicken adobo can be served over steamed rice with some veggies
    • Wrapped up in a tortillas to make a chicken adobo burrito
    • In quesadillas or nachos

    Storing

    Leftover chicken adobo can be stored covered in a refrigerator up to 5 days. You can freeze it in a freezer-safe airtight container up to 3 months.

    Ingredients
      

    • 1.6 lbs chicken breast fillets
    • ⅓ cup soy sauce
    • 1 tablespoon vinegar
    • 1 tablespoon oyster sauce
    • 1 teaspoon sugar
    • 2 pieces bay leaves
    • ¼ teaspoon peppercorns

    Toppings

    • 10 pieces corn tortillas
    • ½ cup red onion julienned
    • 1 cup tomatoes chopped
    • ¼ cup fresh cilantro chopped
    • ¼ cup cheese
    • sour cream
    • chipotle mayo
    • sriracha

    Cooking Chicken

    • 2 tablespoon oil
    • 3 cloves garlic minced
    • thumb-size ginger crushed, julienned

    Instructions
     

    Preparing Sauce and Marinate Chicken

    • In a bowl, mix soy sauce, oyster sauce, vinegar, bayleaves, peppercorns and sugar. Add boneless chicken. Toss and massage to coat the chicken with the sauce. Marinate for 2-4 hours. 

    Cooking Chicken

    • In over medium heat pan, add oil. Add garlic and ginger. Sautè for 1-2 minutes.
    • Add in chicken and cook for 3-4 minutes until slightly brown. 
    • Add remaining adobo sauce and simmer for 5-8 minutes. Once cook, set it aside.
    • Shred or cut chicken into bite-size.
    • Warm tortillas according to package directions. Add shredded chicken adobo and top with desired toppings. Top with chipotle mayo, sour cream and sriracha(optional).
