This Chicken Adobo Wrap combines the flavourful spices of the classic Filipino dish Adobo. With the added vegetables it is a healthy meal as well. The nice part is you can customize this recipe and add whatever vegetable you like. You also have the option to add chipotle mayo and sriracha sauce for some extra kick. These are an easy to make meal wrapped up neatly in a tortilla and a definite hit around the table.

- Chicken: ground chicken is used for this recipe. Can be substituted with ground turkey.
- Veggies for wrap: spinach, corns, cucumbers, avocado. black beans, tomatoes, cilantro and red onion. You can use lettuce instead of spinach.
- Adobo sauce: soy sauce, vinegar, sugar, ginger, garlic and onion.
- Sauce for wrap: chipotle mayo and sriracha. You can skip sriracha if you don't like spicy.
STEP-BY-STEP INSTRUCTIONS
Step 1: How to cook chicken adobo?
In over medium heat pan, add oil. Sautè garlic, onion and ginger. Add ground chicken and stir for 2 -3 minutes. Stir in soy sauce, vinegar, bay leaves, whole peppercorns and a pinch of sugar. Cook for 10-15 minutes or until meat is fully cooked.
Step 2: How to make Chicken Adobo Wrap?
To assemble wrap, simply spread chipotle mayo onto the bottom of each wrap. Then top with spinach, chicken adobo, cucumber, tomato, corn, black beans, onion, avocado and cilantro. Add sriracha sauce for extra spicy.
Step 3: Fold the sides and tightly roll up your chicken adobo wrap. I like to cut them in half so they are easier to eat.

- 454 grams ground chicken
- ¼ cup soy sauce
- 3 tablespoon vinegar
- 3 cloves garlic minced
- 1 small onion chopped
- 1 thumb-sized ginger crushed
- 2 pieces bay leaves
- ½ teaspoon whole peppercorns
- pinch sugar
Veggies for wraps
- spinach
- red onion
- 1 medium tomato chopped
- corn canned
- black beans canned
- 1 piece avocado
- cilantro
Sauce
- chipotle mayo
- sriracha

Notes
- You can make this recipe Vegan or Vegetarian by using tofu or eggplant adobo instead of chicken.

- Spinach can be substituted with lettuce.
