This Vegetarian Pancit Bihon is a classic Filipino noodle dish that is healthy, simple, and easy to make.
Pancit Bihon is a Filipino style rice noodle stir-fry, it is very popular dish in the Philippines. This dish Is always present in birthdays, fiestas, noche buena and any other special occasions. Filipinos usually cook this dish with meat, pork liver and pepperoni. This version is healthier as I only use vegetable and added crispy tofu for extra flavour. This Vegetarian Pancit Bihon is so versatile you can customize the recipes by adding different kinds of vegetables or whatever is available on your pantry.
WHAT IS PANCIT BIHON?
Pancit Bihon is a Filipino Style rice noodle stir-fry. There are two types of Pancit in the Philippines "Pancit Bihon" and "Pancit Canton". Pancit Bihon uses thin rice vermicelli or rice stick noodle while Pancit Canton incorporates an egg noodle similar to spaghetti noodles. But both dishes are cooked with soy sauce and served with calamansi (lime or lemon). Chinese immigrants were first introduced noodles to the Philippines. Since then, Filipinos fully adopted and embraced this dish into the local cuisines.
INGREDIENT NOTES
- Tofu: Use firm or extra firm. I seasoned them with salt and pepper before frying. Pressed is optional.
- Soy Sauce: You can use any soy sauce you want.
- Oyster Sauce: You can skip Oyster Sauce if you don't have any. Vegetarian Oyster Sauce was used with this recipe. However, this will add extra flavour for the dish.
- Sesame Oil: Sesame oil provides the best flavour for our bihon but the usual pancit bihon does not use Sesame Oil. I suggest to add this on the recipe.
- Rice Noodles: Rice Vermicelli or any thin noodles. You can find them in the Grocery store (International Isle).
- Vegetables: I used cabbage, snap peas, carrots and bell peppers.These are easy to customize. You can use red cabbage, or any colour of bell peppers. You can substitute snap peas with snow peas.
- Toppings: Top with scallions and add a squeeze of lemon.
STEP-BY-STEP INSTRUCTIONS FOR VEGETARIAN PANCIT BIHON
- Place the rice vermicille in a large bowl soak them with water for 10 minutes. When noodles are soft, drain and set it aside.
2. Cut tofu into strips. Seasoned them with salt and pepper before pan frying. Pan fry tofu. Once cooked, set it aside.
3. In a wok or large pan over medium hot add oil. Saute onion, garlic and bell pepper for 3 minutes.
Add cabbage, snap peas and carrots.
Add vegetable broth, soy sauce, oyster sauce and sesame oil. Simmer for 6 minutes or until vegetables are tender.
Add rice noodles stir for 5-6 minutes or until noodles are cooked through. Toss cooked tofu into the pan.
4. Remove from heat. Garnish with scallion and squeeze some lemon and serve!

- 1 lb bihon (rice vermicelli noodles)
- water, as needed soak bihon in large bowl
- ½ small green cabbage chopped
- â…› lb snap peas
- 1 cup carrots julienned
- 1 small bell pepper julienned
- 1 medium onion chopped
- 3 cloves garlic minced
- 350 grams tofu cut intro strips or cubes
- 4-5 cups vegetable broth
- 5 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- salt and pepper to taste
- scallions
- olive oil (for cooking)
Instructions
- Place the rice vermicille in a large bowl and soak them with water for 10 minutes. When the noodles are soft, drain and set it aside.
- In a wok or large pan over medium heat, add oil along with the onion, garlic and red bell pepper. Saute for 3 minutes.
- Add cabbage, snap peas and carrots. Sautè for about a minute.
- Add vegetable broth. Stir in oyster sauce, soy sauce and sesame oil. Simmer for 6 minutes or until the vegetables are mostly tender.
- Add noodles, stir until noodles are cooked through. Toss cooked tofu.
- Remove from heat, garnish with green onions and squeeze some lemon. Then serve.
