What is Lumpia?
Lumpia is a Filipino version of spring rolls made with lumpia wrappers and typically filled with ground pork, carrots, onion, cabbage, garlic and soy sauce. They are often served as an appetizer with sweet chili dipping sauce. Filipinos sometimes eat lumpia with rice as well. I mean, why not right? Rice is life and we can't live without it!
Ingredients needed for Air Fryer Veggie Lumpia
Ingredient Notes
- mixed veggies: this recipe uses bean sprouts, carrots, bell peppers, onion and garlic. However, you can also add cabbage and celery. Feel free to add your favourite veggies if you like.
- spices: you only need soy sauce, oyster sauce, salt and pepper. If you like spicy then you can add cayenne powder or even jalapeño.
- onion: we are using white onion. Yellow or Red would also work with this recipe.
Step-by-Step Instructions
Step 1: Prep Veggies: First, peel carrots, onion and remove the seeds of bell peppers. Cut them into strips with the same sizes. It doesn't have to be precise. Chop some garlic.
Step 2: Make the Filling: In over medium heat pan, add oil. Sautè garlic and onion. Add carrots and bell peppers. Cook for 3 minutes until softened.
Add bean sprouts. Season with soy sauce, oyster sauce, salt and pepper. Add cilantro and green onions. Cook for another 2-3 minutes and make sure to not over cook the veggies. Set aside.
Step 3: Wrap the Lumpia: Unpack the spring roll wrappers. Carefully peel the wrappers to separate into individual sheets. Cover with damp paper towel or cloth to keep them from drying.
Grab about 2 tablespoons of the vegetable mixture and place on the bottom of the wrapper. Fold side ends of the sheet inward. Start rolling up and use egg white to seal the lumpia. So when you air fry them it won't fall apart.
