    What are Filipino Hotcakes?

    Hotcakes are a Filipino version of pancakes and make a popular afternoon snack or merienda in the Philippines. Made with flour, egg, baking powder, sugar, milk and yellow food color.

    Once the pinoy hotcakes are cooked, it is then brushed with margarine or butter then topped with sugar for a sweet and savory taste.

    In the Philippines, you will often find vendors selling these filipino style pancakes. These pancakes are enjoyed and served hot and as a quick snack while on the go.

    This reminds me of my childhood days. I remember when I was in elementary school. I would always ask my Mother to buy me hotcakes for lunch. I really loved them when they were warm and especially when the margarine and sugar melts.

    Simple Pancakes Recipe

    This filipino style hotcake recipe feature simplicity, less preparation and minimal ingredients.

    • Basic Ingredients. It requires a basic staple ingredients such as all purpose flour, eggs, milk, sugar. baking powder and salt. These ingredients are often find in a filipino households.
    • Very Straightforward. The process is very simple, just combine wet ingredients then add dry ingredients, and then cook the batter in the pan.
    • Minimal Kitchen Equipments. To make this, you only need basic equipment like a pan, a mixing bowl and whisk for stirring.

    Ingredients Needed

    Here are the list of ingredients needed.

    • All Purpose Flour: This is one of the main ingredients for this recipe. This serves as the base for the batter.
    • Sugar: This recipe uses white granulated white sugar for some sweetener. Or feel free to use your preferred sweetener.
    • Baking Powder: For a softer texture.
    • Salt: To enhance the flavor and balances the sweetness.
    • Eggs: It helps to bind the ingredients together.
    • Butter: Unsalted butter. You can substitute it with oil.
    • Milk: It adds moisture and richness to the pancakes. You can use regular milk.
    • Yellow Food color: This is where the yellow color comes from.
    • Margarine: For toppings.

    How to make it

    Step 1. Dry Ingredients. In a large mixing bowl, sift together the flour, sugar, baking powder, and salt.

    Step 2. Wet Ingredients. In a separate large bowl, beat the egg lightly. Add milk, melted butter, and yellow food color. Mix until well combined.

    Step 3. Pancake mixture. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

    Step 4. Cook. Heat a non-stick pan or griddle over medium heat. Grease the pan lightly with butter or oil.

    Pour about ¼ cup of batter onto the hot skillet for each hotcake. Cook until bubbles form on the surface or until set, about 2-3 minutes. And flip pacakes and cook for another 1-2 minutes.

    Step 5. Serve. Transfer the cooked filipino hotcakes in a serving plate. Top with margarine and sugar.

    Cooking Tips

    • Sifting dry ingredients helps you achieve the smooth and lump-free batter.
    • Make sure to gradually incorporate the wet ingredients to achieve right consistency.
    • Do not over mix the batter as it will result tough texture.
    • Lightly grease your preheated pan before pouring the batter.
    • Use non-stick pan or skillet to prevent hotcakes sticking in the pan.

    Store

    Allow hotcakes to cool completely before storing. Once cooled down, store in airtight container in the refrigerator and consume within a 1-2 days.

    Can i use evaporated milk ?

    Yes, you can use evaporated milk for this recipe.

    Why the hotcakes are too thick?

    You can spread the batter out slightly by tilting the pan after pouring it onto the skillet to achieve a thinner hotcake.

    How do i know when hotcakes are done?

    They are ready to flip when bubbles start to form on the surface and the edges look set. You can also gently lift up the edge with a spatula to check if it's golden brown before flipping.

    Can i skip yellow food coloring?

    Yes, but traditional filipino hotcakes recipe is known for it's yellow color.

    Ingredients
      

    Dry Ingredients

    • 1 cup all purpose flour
    • 1 teaspoon baking powder
    • 2 tablespoon sugar

    Wet Ingredients

    • 1 medium egg
    • 1 cup milk
    • 1 tablespoon melted butter
    • ¼ teaspoon salt
    • 2 drops yellow food color more if needed

    Toppings

    • Margarine
    • Sugar

    Instructions
     

    • In a mixing bowl, sift together the all-purpose flour, sugar and baking powder. Mix until well combined.
    • In a separate bowl, beat the egg lightly. Then add the milk, melted butter or oil, salt and yellow food color. Mix until incorporated. Add more yelow coloring if needed.
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to over mix the batter, as this can result in tough hotcakes.
    • Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or oil.
    • Pour about ¼ cup of batter onto the hot skillet for each hotcake. Cook for 2-3 minutes or until bubbles form on the surface. Carefully flip the hotcakes with a spatula and cook for another 1-2 minutes, or until golden brown on the bottom.
    • Transfer the cooked hotcakes to a plate. Top with margarine and sugar. Serve and enjoy!
