This Vegetarian Pancit Canton is packed with veggies and flavours. This dish is very popular in the Philippines and a mainstay around the table. It is very easy to prepare and will be ready in less than 30 minutes.
Growing up in the Philippines, Pancit Canton is one of the dishes I really liked and enjoyed. My Mother would always cook it whenever there's a birthday or for any occasions really. It is something you can serve as a side or a main at any time of the day.
However, she would prepare this dish with meat, usually pork or chicken. Since I am away from home and craving for these delicious noodles, I decided to make a vegetarian option for this recipe. I used tofu as a substitute for the meat. And it turns out so freaking good! It is a must try and an easy entry into Filipino cuisine.

We are using flour stick noodles, there's lots of different brands you can find at the Grocery Store. But this specific brand "Buenas" is my favourite. I really like the texture and of course is very budget friendly. I bought these ones at Walmart.
