Vegetarian Pancit Canton

This Vegetarian Pancit Canton is packed with veggies and flavours. This dish is very popular in the Philippines and a mainstay around the table. It is very easy to prepare and will be ready in less than 30 minutes.

Ingredients
  

  • 227 g flour stick noodles (pancit canton)
  • 350 g extra firm tofu
  • 2 tablespoon olive oil
  • 1 medium onion julienned
  • 5 cloves garlic minced
  • 1 large carrots peeled, julienned
  • 18 pieces snow peas
  • 2 stalks green onions
  • tablespoon soy sauce
  • 1 tablespoon vegetarian oyster sauce
  • cup vegetable broth
  • salt and pepper seasoned tofu

Instructions
 

Fry Tofu

  • In over medium heat wok, add oil. Fry tofu for 2 -3 minutes each side until brown. Set it aside.

Cooking Veggies

  • In same wok, add oil. Sautè onion, garlic and white parts of green onions. Stir for 1-2 minutes. Add carrots and snow peas.
  • Mix in soy sauce and vegetarian oyster sauce.
  • Pour in 2 cups vegetable broth. And simmer for 2-3 minutes until veggies are softened.
  • Toss flour sticks noodles and mix the noodles from bottom to top to soak the top part in the broth as well.Add ¼ cup of vegetable broth if needed. Adjust to low heat and stir occasionally. Cook noodles for 4-5 minutes until chewy.
  • Add cooked tofu. Season with ground pepper to taste.
  • Transfer to a serving plate and sprinkle with green onions. Enjoy!

Notes

Spice it up with sriracha sauce or chili oil for an extra kick.
