What is Dynamite Lumpia?
Dynamite Lumpia (Lumpiang Dynamite) is a Filipino dish that consists of ground pork stuffed in Jalapeño or Green Chillies. The term "Dynamite'' is used to describe the spiciness of the dish (spicy), while "Lumpia" is a Filipino term of spring rolls.
Ingredients Needed
- Ground Meat: This recipe uses ground pork. Feel free to use ground beef or chicken.
- Green Chillies or Siling Haba: You can use siling haba, jalapeño or use chillies that are large enough to stuffed. Remove the seeds and membranes to reduce the heat.
- Lumpia Wrappers: You can use lumpia wrappers or spring roll wrappers. These wrappers can usually be found in the frozen section of Asian grocery stores. Make sure to thaw them properly according to the package instructions before using. This doesn't work with egg roll wrappers.
- Seasonings: I used oyster sauce for umami flavour then salt and pepper to taste. Add some minced garlic and green onions for extra flavour.
- Oil: Use oil with a high smoke point, such as vegetable oil or canola oil, for frying.
How to make it
Step 1. Prepare Green Chillies
- Wash and dry Green Chillies.
- Carefully make a slit along one side of each pepper, creating an opening for stuffing.
- Remove the seeds and membranes if you want to reduce the spiciness.
Step 2. Prepare the Filling
- Mix ground pork and seasoning in a bowl.
- Transfer the filling into a ziploc and cut the edge.
Step 3. Stuff and Assemble
- Stuff peppers with filling and press gently to ensure it's well-packed.
- Position the spring roll on a flat working surface in a diamond pattern.
- Tuck and fold the right-pointed end of the wrapper inward and place the stuffed pepper horizontally with the stem outside of the wrapper.
- Fold the left and bottom sides over the chili pepper and roll tightly to enclose fully. Dab the seam with water and gently press to seal completely.
Step 5. Fry Lumpia
- Carefully place the wrapped chili peppers into the hot oil, seam side down.
- Fry them until the lumpia wrappers turn golden and crispy.
Step 6. Drain and Serve.
- Once cooked, place them on a plate lined with paper towels to drain excess oil. Serve with sweet chili sauce and enjoy.

- Dynamite Lumpia (Dynamite Lumpia with Ground Pork Filling) is best enjoyed when it's hot and crispy. Serve it immediately after frying for the ultimate taste and texture experience.

How to Store
- To store, uncooked Dynamitang Lumpia simply arrange them on a baking sheet, ensuring they don't touch, and freeze until solid. Then transfer them to a ziploc bag.
- Fry directly from frozen, adding a few extra minutes to the frying time.

- 28 pieces siling haba seeded
- 450 grams ground pork
- 3 cloves garlic minced
- 3 stalks green onions finely chopped
- 1 tablespoon oyster sauce
- salt and pepper to taste
- oil for frying
- 28 pieces spring roll wrappers/lumpia wrappers
Instructions
- Wash and dry Green Chillies. Carefully make a slit along one side of each pepper, creating an opening for stuffing. Remove the seeds and membranes if you want to reduce the spiciness.
- In a bowl, combine ground pork, minced garlic, chopped green onions, oyster sauce, salt and pepper to taste.
- Transfer the filling to ziploc or use a teaspoon and gently stuff each chili pepper with pork mixture.
- Separate lumpia wrappers and lay on a flat work surface. On a flat working surface, position the spring roll in a diamond pattern.
- Tuck and fold the right-pointed end of the wrapper inward and place the stuffed pepper horizontally with the stem outside of the wrapper.
- Fold the left and bottom sides over the chili pepper and roll tightly to enclose fully. Dab the seam with water and gently press to seal completely.
- In over medium heat pan, add oil about 2 inches deep. Carefully place the wrapped chili peppers into the hot oil. Fry them until the lumpia wrappers turn golden and crispy, turning as needed which should take about 5-7 minutes.
- Once cooked, place them on a plate lined with paper towels to drain excess oil. Serve with sweet chili sauce and enjoy.
Notes
- When making Dynamite Lumpia, ensure the filling is well-packed inside the chili peppers and the lumpia wrappers are sealed tightly to prevent any leaks during frying.
- Do not overcrowd them when frying.
- Make sure to heat oil before frying to achieved crispy texture.
