    Air Fryer Crispy Pata

    This Air Fryer Crispy Pata is better than take out! It is crispy, tender and juicy. The secret for this recipe is using SPRITE, yes, that is right! This Pata (Pork Hock) is boiled with sprite, star anise, bay leaves, peppercorns, 5 spice powder, garlic and salt & pepper before air frying. All the aromatic elements will penetrate the Crispy Pata and that is what makes it so special!

    INGREDIENTS NEEDED FOR AIR FRYER CRISPY PATA

    INGREDIENT NOTES

    • Pork hock: you will find them in any grocery store meat section. I just love the texture and the skin.
    • Spices: bay leaves, star anise, peppercorns, garlic and 5 spice powder.
    • Sprite: secret for this recipe. It gives additional flavour.
    • Seasonings: salt and pepper.
    • Dipping sauce: soy sauce, vinegar and onion.

    STEP-BY-STEP INSTRUCTIONS

    Step 1: In a large pot, combine pork hock, bay leaves, peppercorns, star anise, garlic and add 5 spice powder. Pour sprite and water. Season with salt and pepper. Bring it to boil for 90 minutes until pork hock is tender.

    Step 2: Remove pork hock from the pot. Let cool down and pat dry using paper towel. Rub with vinegar, garlic, salt and pepper. Let it dry for 5-6 hours or overnight. Or dehydrate using air fryer for 1-2 hours.

    Step 3: Rub pork hock with oil. Place it in the air fryer and air fry for 375F for 10 minutes. Adjust temperature for 350F and cook for another 15 minutes.

    How to make dipping sauce?

    In a small bowl, simply combine soy sauce, vinegar, onion and red peppers if you want it spicy.

    • 1 tablespoon whole peppercorn
    • 2 pieces star anise
    • 1 teaspoon 5 spice powder
    • 3 cloves garlic crushed
    • 3 tbsp oil
    • salt and pepper to taste

    Dipping Sauce

    • soy sauce
    • vinegar
    • onion chopped
    • salt and pepper

    Instructions
     

    • In a large pot, combine pork hock, bay leaves, peppercorns, star anise, garlic and add 5 spice powder. Pour sprite and water. Season with salt and pepper.
