Chicken Adobo Tacos

These Chicken Adobo Tacos are super easy to make serve with homemade adobo sauce. Adobo derived from the Spanish word Adobar, meaning ''marinade''. Marinating meats in soy sauce, vinegar, garlic, peppercorns, ginger and sugar. Filipino Adobo sauce quite similar to Spanish sauce.

Ingredients
  

  • 1.6 lbs chicken breast fillets
  • cup soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 2 pieces bay leaves
  • ¼ teaspoon peppercorns

Toppings

  • 10 pieces corn tortillas
  • ½ cup red onion julienned
  • 1 cup tomatoes chopped
  • ¼ cup fresh cilantro chopped
  • ¼ cup cheese
  • sour cream
  • chipotle mayo
  • sriracha

Cooking Chicken

  • 2 tablespoon oil
  • 3 cloves garlic minced
  • thumb-size ginger crushed, julienned

Instructions
 

Preparing Sauce and Marinate Chicken

  • In a bowl, mix soy sauce, oyster sauce, vinegar, bayleaves, peppercorns and sugar. Add boneless chicken. Toss and massage to coat the chicken with the sauce. Marinate for 2-4 hours. 

Cooking Chicken

  • In over medium heat pan, add oil. Add garlic and ginger. Sautè for 1-2 minutes.
  • Add in chicken and cook for 3-4 minutes until slightly brown. 
  • Add remaining adobo sauce and simmer for 5-8 minutes. Once cook, set it aside.
  • Shred or cut chicken into bite-size.
  • Warm tortillas according to package directions. Add shredded chicken adobo and top with desired toppings. Top with chipotle mayo, sour cream and sriracha(optional).
