Make the best Air Fryer Veggie Lumpia at home in less than 30 minutes. These crunchy, crispy and delicious Lumpia are made with mixed vegetables like bean sprouts, carrots and bell peppers. Lumpia is a Filipino version of spring rolls made with lumpia wrappers and typically filled with ground pork, carrots, onion, cabbage, garlic and soy sauce. They are serve as an appetizer with sweet chili sauce.
In over medium heat pan, add oil. Sautè onion and garlic for 1-2 minutes.
Add carrots and bell peppers. Stir in soy sauce, oyster sauce and rich of sugar. Season with salt and pepper. Cook for 3-4 minutes until softened.
Add bean sprouts.
Add chopped green onion and cilantro. Stir for another 2-3 minutes.
Transfer the cooked vegetables in a plate or bowl. Let it cool and drain excess liquid.
Wrap the Veggie Lumpia
Lay the wrapper on a plate. Place around 2 tablespoon of mixed vegetables.
Fold the bottom wrapper.
Fold the opposite edges of the wrapper.
Gently roll up until the vegetables are secured. Seal the end of the wrapper by dipping your finger on the egg white and rub it over. This is to prevent them from falling apart when air frying.
Air Frying the Lumpia
Preheat an air fryer 360 degree F. Place lumpia on the basket. Brush with oil, cook in batches if necessary. Fry for 5 minutes. Flip and cook until brown or crispy for another 5 minutes.
