Filipino Style Carbonara

This rich and creamy Filipino Style Carbonara is a family favourite loaded with crispy bacon and sautéed mushrooms. It is perfect for family dinners and special occasions and sure to please everyone.

Ingredients
  

  • 1 lb spaghetti noodles
  • 1.5 lb bacon chopped
  • 1 medium white onion peeled, finely chopped
  • 3 cloves garlic minced
  • 1 lb mushrooms thinly sliced
  • 2 tablespoon butter
  • 1 tablespoon flour
  • 3 tbsp grated parmesan cheese 1 tablespoon for garnish
  • 1 teaspoon ground nutmeg
  • 1 cup chicken broth
  • cups all purpose cream
  • salt and pepper to taste
  • parsley garnish

Instructions
 

  • Cook pasta according to packaging instruction. Put a large pot of salted water on to boil. Drain and set aside.
  • In over medium heat pan, cook bacon slowly or until crisp. Remove from the heat and drain with paper towel.
  • In the same pan, discard and remove bacon oil except for 1 tablespoon. Sautè onion and garlic for 2 minutes until softened. Add mushrooms and cook until softened. Remove and set aside.
  • In the same pan, add butter and flour. Stir regularly for 1-2 minutes or until smooth and lightly browned.
  • Add chicken broth and all purpose cream. Simmer in a low heat for 3-4 minutes.
  • Add grated parmesan cheese and nutmeg. Season with salt and pepper to taste.
  • Add noodles, sautéed mushrooms and bacon.
  • Toss to combine until pasta is coated with sauce and heated through. 
  • Garnish with parsley and parmesan cheese. Serve hot.
