Filipino Style Carbonara

This rich and creamy Filipino Style Carbonara is a family favourite loaded with crispy bacon and sautéed mushrooms. It is perfect for family dinners and special occasions and sure to please everyone.

- 1 lb spaghetti noodles
- 1.5 lb bacon chopped
- 1 medium white onion peeled, finely chopped
- 3 cloves garlic minced
- 1 lb mushrooms thinly sliced
- 2 tablespoon butter
- 1 tablespoon flour
- 3 tbsp grated parmesan cheese 1 tablespoon for garnish
- 1 teaspoon ground nutmeg
- 1 cup chicken broth
- 1¾ cups all purpose cream
- salt and pepper to taste

Cook pasta according to packaging instruction. Put a large pot of salted water on to boil. Drain and set aside.
In over medium heat pan, cook bacon slowly or until crisp. Remove from the heat and drain with paper towel.
In the same pan, discard and remove bacon oil except for 1 tablespoon. Sautè onion and garlic for 2 minutes until softened. Add mushrooms and cook until softened. Remove and set aside.
In the same pan, add butter and flour. Stir regularly for 1-2 minutes or until smooth and lightly browned.
Add chicken broth and all purpose cream. Simmer in a low heat for 3-4 minutes.
Add grated parmesan cheese and nutmeg. Season with salt and pepper to taste.
Add noodles, sautéed mushrooms and bacon.
Toss to combine until pasta is coated with sauce and heated through.
Garnish with parsley and parmesan cheese. Serve hot.
