This rich and creamy Filipino Style Carbonara is a family favourite loaded with crispy bacon and sautéed mushrooms. It is perfect for family dinners, special occasions and sure to please everyone around the table.
What is Filipino Carbonara?
Carbonara is a dish of Italian origin consisting of hot pasta, usually mixed with bacon, mushrooms, eggs and grated cheese. The special creamy sauce brings it all together.
For this Filipino style Carbonara we are using all purpose cream, bacon, mushrooms, and grated cheese. The main difference in this recipe is the use of all purpose cream in place of eggs.

- noodles: any type of pasta will work just fine for this recipe. However I suggest you use spaghetti or linguini noodles.
- bacon: the core ingredient for carbonara is cured meat like bacon or ham. This is a must. Make sure to drain excess oil when frying them as we don't want the carbonara to be oily.
- mushrooms: feel free to use white or cremini button mushrooms for this recipe.
- broth: we are using chicken broth. You can also use vegetable broth.
- cream: all purpose cream of any brand will work just fine.
- cheese: we are using grated parmesan cheese.
- nutmeg: don't skip nutmeg! The traditional filipino carbonara does not use nutmeg however this gives my version of the dish extra flavour.
Step-by-step Instruction
Step 1: Cook pasta according to the packaging instructions. Put a large pot of salted water on to boil and drain.
Step 2: In over medium heat pan, cook bacon slowly or until crispy. Remove from the heat and drain with paper towel.
Step 3: In the same pan, discard and remove bacon oil except for 1 tablespoon. Sautè onion and garlic for 2 minutes until softened. Add mushrooms and cook until softened. Remove and set aside.
Step 4: In the same pan, add butter and flour. Stir regularly for 1-2 minutes or until smooth and lightly browned. Add chicken broth and cream. Simmer in a low heat.
Step 5: Add grated parmesan cheese and nutmeg. Season with salt and pepper to taste.
Step 6: Add noodles, sautéed mushrooms and bacon. Toss to combine until pasta is coated with sauce and heated through.
Step 7: Garnish with parsley and parmesan cheese. Serve hot and enjoy!

- 3 cloves garlic minced
- 1 lb mushrooms thinly sliced
- 2 tablespoon butter
- 1 tablespoon flour
- 3 tbsp grated parmesan cheese 1 tablespoon for garnish
- 1 teaspoon ground nutmeg
- 1 cup chicken broth
- 1¾ cups all purpose cream
- salt and pepper to taste
