Tofu Adobo (Adobong Tokwa)

This easy to prepare Tofu Adobo recipe retains the classic tastes of the immensely popular adobo dishes of the Philippines but cuts down on the calories.

Ingredients
  

  • 350 g tofu extra firm
  • 2 tablespoon oil
  • 5 cloves garlic minced
  • 1 small onion chopped
  • 1 teaspoon whole peppercorns
  • 4 pieces bayleaves
  • teaspoon brown sugar adjust to taste
  • ¼ cup vinegar
  • ¼ cup water
  • cup soy sauce

Instructions
 

  • Press tofu to remove excess water. Cut into cubes or shape of your choice.
  • In over medium heat pan, add oil. Pan fry tofu for 3-4 minutes each sides or until brown and crisp.
  • Once browned, remove tofu from the pan and set it aside.
  • In the same pan, drizzle some oil. Sautè onion, garlic, whole peppercorns and bayleaves for 2-3 minutes until fragrant.
  • Add back tofu and stir for another 1-2 minutes.
  • Mix soy sauce, vinegar and brown sugar in a bowl. Stir until sugar is dissolved.
  • Pour in adobo sauce and simmer for 8-10 minutes until sauce is incorporated.
  • Remove from the heat. Serve with rice and enjoy!
