    This easy to prepare Tofu Adobo recipe retains the classic tastes of the immensely popular adobo dishes of the Philippines.

    What is Adobo?

    Adobo actually refers to the way the food is cooked. Specifically slowly braised in a sauce comprised of vinegar, soy sauce, and sugar. This gives you a savoury taste with a hint of acidity from the vinegar, and a balanced sweetness from the sugar.

    Adobo is one of the most popular dishes in the Philippines and something I ate often growing up. I am sure all family have their own tricks and preferences when cooking Adobo. You can add vegetables, like potatoes and carrots. And Also you can make them in a tacos like this.

    Chicken Adobo Tacos

    Tofu works really well as a sort of crispy sponge to take in all the flavour from the sauce. You can adjust the seasonings based on your preference. But regardless of how you like your adobo, the one constant is, you probably guessed it. Rice!

    Ingredients Needed

    • Tofu: firm or extra firm works great with this recipe. Press tofu to remove excess water.
    • Vinegar: white distilled vinegar.
    • Soy sauce: I am using the Filipino Datu Puti soy sauce brand. Low sodium or regular soy sauce is fine.
    • Aromatics: onion, garlic, peppercorns, and bayleaves. Must haves in Adobo dishes.
    • Sugar: white or brown works fine.

    Step-by-step Instructions

    Step 1. Cut pressed tofu into cubes.

    Step 2. Pan fry tofu until golden brown and set it aside.

    Step 3. Sautè onion, garlic, peppercorns, and bayleaves until fragrant.

    Step 4. Add back tofu and stir until combined.

    Step 5. Mix adobo sauce, soy sauce, vinegar and brown sugar in a bowl. Pour in adobo sauce and mix until incorporated.

    Step 6. Serve Tofu Adobo with rice and enjoy!

    Tofu Adobo (Adobong Tokwa)

    Ingredients
      

    • 350 g tofu extra firm
    • 2 tablespoon oil
    • 5 cloves garlic minced
    • 1 small onion chopped
    • 1 teaspoon whole peppercorns
    • 4 pieces bayleaves
    • 1½ teaspoon brown sugar adjust to taste
    • ¼ cup vinegar
    • ¼ cup water
    • ⅓ cup soy sauce

    Instructions
     

    • Press tofu to remove excess water. Cut into cubes or shape of your choice.
    • In over medium heat pan, add oil. Pan fry tofu for 3-4 minutes each sides or until brown and crisp.
    • Once browned, remove tofu from the pan and set it aside.
    • In the same pan, drizzle some oil. Sautè onion, garlic, whole peppercorns and bayleaves for 2-3 minutes until fragrant.
    • Add back tofu and stir for another 1-2 minutes.
    • Mix soy sauce, vinegar and brown sugar in a bowl. Stir until sugar is dissolved.
    • Pour in adobo sauce and simmer for 8-10 minutes until sauce is incorporated.
    • Remove from the heat. Serve with rice and enjoy!
