Sinangag (Filipino Garlic Fried Rice)

Ingredients
  

  • 3 cups cooked rice
  • 3 tablespoon oil canola, vegetable of grape-seed
  • 8 cloves garlic minced or chopped
  • salt and pepper to taste

Instructions
 

  • Heat a large pan or wok over medium heat and add the cooking oil.
  • Add minced garlic and sautè for about 2-3 minutes in a low heat until lightly golden brown. Remove the garlic with slotted spoon leaving the garlic-infused oil behind. Drain fried garlic with paper towel.
  • In the same wok, return the heat to medium high heat add cooked rice and spread in the surface to evenly distributed. Stir for 3-5 minutes to allow the flavors to meld together. Continue to cook until heated through.
  • Return the fried garlic to the pan (save some for garnish, if desired). Season with salt and pepper to taste. 
  • Transfer to a serving plate and topped with crispy garlic. Serve and enjoy.

Notes

Cooking Tips
  • use a day old rice as they are dryer and resulting a better texture of fried rice.
  • the key ingredient for Sinangag is using lots of garlic. Use plenty of minced or chopped garlic to infuse the rice with its delicious aromatic flavor.
  • to make garlic oil, make sure to cook garlic in low heat to release its flavor and aroma.
  • stir fry rice in medium high heat to prevent mushy and achieve a slightly crispy texture.
