Instructions
Combine ground pork, carrots, onion, garlic and cilantro in a bowl.
Add oyster sauce, sugar, salt and black pepper. Mix until seasonings are evenly distributed.
Place wrapper on a flat surface, add a heaping tablespoon (more if needed) of meat filling on the wrapper.
Grasp the bottom edge of the wrapper and roll it up and over the filling, continuing to roll until 2 inches of wrapper remain.
Brush with water to seal the wrapper.
Cut lumpia with scissor into two equal parts. Repeat the process with the remaining wrappers and filling until you have used up all the filling.
To deep fry lumpia, fill the pot with ½-inch of canola oil. Heat oil in medium heat. Carefully add the pork lumpia rolls to the hot oil, making sure not to overcrowd the pot. Cook for 5-7 minutes flipping halfway or until golden brown.
Remove the lumpia rolls using slotted spoon or thong from the oil and place them on a paper towel-lined plate to drain off any excess oil.
Transfer to a serving plate, serve with sweet chili sauce and enjoy.
