Afritadang Manok (Chicken Braised in Tomato Sauce)

Afritadang Manok or known as "Chicken Afritada" is a stew made with tender chicken pieces, potatoes, carrots, and bell pepers. Then simmered in flavourful tomato sauce.

- 2 lbs. chicken bone in
- 2 tablespoon oil
- 1 medium onion sliced
- 2 cloves garlic minced
- 1 large carrots peeled and cubed
- 1 large potato cubed
- 1 red bell peppers cubed
- 1 cup tomato sauce
- 1 cup water
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 2 pieces bay leaves
- salt and pepper to taste
In a bowl season chicken with salt and pepper. Mix until combined.
In medium heat cooking pot, add oil. Add the chicken pieces to the hot oil and brown them on all sides and set aside.
In the same cooking pot, sautè onion and garlic until aromatics. Add tomato sauce, bay leaves, water, oyster sauce, sugar, salt and pepper to taste. Let it simmer in few minutes. Add chicken back to the pot.
Add potatoes and carrots. Cover the lid and simmer for 15 minutes or until chicken is cooked and veggies are tender. Add bell peppers and cook for another 2 minutes. Season with salt and pepper if needed.
Serve with rice and enjoy!
