Heat oil in a pan or wok on medium-low heat. Not too much oil, just enough to cover about half of the banana.
Add ½ cup of brown sugar and stir for about 1-2 minutes until sugar started to caramelized.
Stir in Banana and fry for 8 minutes. Stir frequently until banana is fully coated with sugar. Sprinkle some brown sugar on top of banana and fry for another 2 minutes.
Remove caramelized banana one by one and stick it into a skewer.
Let it cool and enjoy.
Notes
banana: we used ''Saba" banana you will find them in asian store or Filipino store. Make sure to pick the ripe ones. Avoid using overripe bananas as it will turns mushy once it's cooked. If you are using Plantains cut them halves as they are longer.
sugar: we are using light brown sugar for this recipe. Muscovado or dark brown sugar works great as well.
oil: I love using canola oil.
bamboo skewers are not necessary. You can eat them with your hands or using utensils.
