These Ube Sugar Cookies are so easy to make and made with only 4 ingredients. These delightful purple-hued cookies are a twist on the classic sugar cookie, with the unique ube flavor.
Preheat oven to 325°F. Line a large cookie sheet with parchment paper.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the ube extract to the butter mixture and mix until well combined.
Add in flour. Mix in low speed until flour is completely incorporated. Your dough will look crumbly at first. Scrape down the side to make sure the butter is not sticking. Increase speed to medium once the flour is incorporated. Continue mixing until all the dough sticks together into one clump.
Scoop a tablespoon of cookie dough and roll it between your palms to form a ball shape. Roll into sugar and transfer to the baking sheets.
Press the dough down using glass or palm to flatten. Repeat with remaining dough.
Bake cookies about 13-15 minutes or until edges start to brown. Let cookies cool on baking sheet before removing.
Notes
This recipe makes about 12 cookies.
You can add bit more of ube extract for stronger ube flavor.
These cookies are crispier on the outside and slightly chewy in the center. They are different than shortbread cookies
To achieved a uniform cookie sizes you can use cookie scoop/ice cream scoop.
Make sure to leave a space between cookies as they spread when baking.
Allow the cookies to cool on the baking sheet for 8-10 minutes, then transfer to a wire rack to cool completely. This will ensure cookies to firm up and maintain their shape.
