Filipino Beef Curry

This Filipino Beef Curry is a pinoy version of beef curry. It is delicious, tender and hearty. This beef curry is braised with coconut milk and tossed with curry spices. This flavourful dish is perfect for the whole family. It yields enough for tasty leftovers too!

- 2 tablespoon olive oil
- 1.2 lbs beef chuncks
- 1 medium potato peeled, cubed
- 1 medium carrots peeled, cubed
- 1 small bell pepper seeded, cubed
- 1 medium onion chopped
- 4 cloves garlic minced, chopped
- 1 thumb sized ginger chopped, julienned
- 1 can coconut milk
- 1½ tablespoon curry powder
- 1 teaspoon cumin
- 1 teaspoon fish sauce
- 2 teaspoon soy sauce
- pinch sugar
- salt and pepper to taste
- ½ cup water
Season beef with salt and pepper.
Sear beef for about 2-3 minutes each side. Remove from the pan and set it aside.
Over medium heat pot, heat oil. Saute onion until translucent. Add garlic and ginger then sauté for a minute.
Add seared beef, curry powder and cumin.
Add coconut milk, water, soy sauce and fish sauce. Bring to boil then simmer in a low heat for 1 hour.
Add potatoes and carrots. Cook for another 5 minutes or until vegetables are tender.
Add bell peppers, sugar then season with salt and pepper. Stir for another 2-3 minutes.
Serve with freshly cooked rice and enjoy!
For creamier consistency simmer beef curry in a lower heat.
Feel free to add cayenne powder or chili flakes for extra spicy.
Filipino curry usually not spicy, don't hesitate to add chili if you are a spicy lovers.
