    Filipino Beef Curry

    This Filipino Beef Curry is a pinoy version of beef curry. It is delicious, tender and hearty. This beef curry is braised with coconut milk and tossed with curry spices. This flavourful dish is perfect for the whole family. It yields enough for tasty leftovers too!

    INGREDIENTS NEEDED FOR FILIPINO BEEF CURRY

    INGREDIENT NOTES

    • beef chunks: I used beef chunks for this recipe. You can also buy beef chuck roast and cut them into cubes.
    • coconut milk: fresh or canned coconut milk works just fine.
    • vegetables: potato, carrots and bell peppers. For bell peppers, feel free to use any colour you want. Red, green or yellow.
    • spices: curry powder, cumin, salt and pepper.
    • sauce: fish sauce and soy sauce.

    STEP-BY-STEP INSTRUCTIONS

    Step 1: Season beef with salt and pepper. In a pot, add oil. Seared beef for 2-3 minutes both sides. Remove beef and set it aside.

    Step 2: Sauté onion for 2 minutes until translucent. Add garlic and ginger then sautè for a minute. Add in seared beef.

    Step 3: Add curry powder, cumin, soy sauce and fish sauce. Then add coconut milk, ½ cup of water and mix.

    Step 4: Bring it to boil then simmer in low heat for 1 hour or until beef is tender. Add potatoes, carrots and cook for another 5 minutes or until vegetables are soft. Add bell peppers then season with salt and pepper. Serve filipino beef curry with jasmine rice.

    Viola!

    Storing Left-overs

    To freeze, allow to cool completely and transfer to a sealed container. This will last for up to 2 weeks.

    Left-overs are best stored in the fridge. Let cool then store up to 3-5 days in a sealed container. Microwave or re-heat in a saucepan over low heat.

    Ingredients
      

    • 2 tablespoon olive oil
    • 1.2 lbs beef chuncks
    • 1 medium potato peeled, cubed
    • 1 medium carrots peeled, cubed
    • 1 small bell pepper seeded, cubed
    • 1 medium onion chopped
    • 4 cloves garlic minced, chopped
    • 1 thumb sized ginger chopped, julienned
    • 1 can coconut milk
    • 1½ tablespoon curry powder
    • 1 teaspoon cumin
    • 1 teaspoon fish sauce
    • 2 teaspoon soy sauce
    • pinch sugar
    • salt and pepper to taste
    • ½ cup water

    Instructions
     

    • Season beef with salt and pepper.
    • Sear beef for about 2-3 minutes each side. Remove from the pan and set it aside.
    • Over medium heat pot, heat oil. Saute onion until translucent. Add garlic and ginger then sauté for a minute.
    • Add seared beef, curry powder and cumin.
    • Add coconut milk, water, soy sauce and fish sauce. Bring to boil then simmer in a low heat for 1 hour.
    • Add potatoes and carrots. Cook for another 5 minutes or until vegetables are tender.
    • Add bell peppers, sugar then season with salt and pepper. Stir for another 2-3 minutes.
    • Serve with freshly cooked rice and enjoy!

    Notes

    For creamier consistency simmer beef curry in a lower heat. 
    Feel free to add cayenne powder or chili flakes for extra spicy.
    Filipino curry usually not spicy, don't hesitate to add chili if you are a spicy lovers.
