Filipino Salabat (Homemade Ginger Tea), is a soothing and heartwarming homemade tea. Made with fresh boiled ginger, and a touch of lemon and some honey for a sweet-spicy flavour!

- 2 cups water
- 1 piece ginger 1-inch chunk, peeled
- lemon slices
- honey or sugar to sweeten, optional
Wash the ginger root thoroughly to remove any dirt. Peel and slice the ginger into thin rounds or crush it with the back of a knife.
In a pot, bring 2 cups of water to a boil. You can adjust the amount of water depending on how strong you want the tea to be.
Once the water is boiling, add the sliced or crushed ginger to the pot.
Reduce the heat to low and let the ginger simmer in the water for about 7 minutes. Remove the pot from the heat and strain the tea into a cup to remove the ginger pieces.
If you like, you can add a squeeze of calamansi or lemon juice to the tea for a citrusy twist. And add honey or sugar to sweeten it.
Best served hot.
