Garlic Butter Fried Rice

Sometimes you may find yourself with some leftover rice, and one great option is making Garlic Butter Fried Rice! It's budget friendly, vegetarian, and has a wonderful savoury taste. This recipe takes less than 20 minutes so include it today in your dinner plans.

- 2 cups cooked rice
- 6 cloves garlic
- 2 tablespoon butter melted
- 1 teaspoon olive oil
- 2 stalks green onions
- 2 larges eggs
- 1½ teaspoon soy sauce
- ½ teaspoon black pepper
- salt if needed
Separate egg yolks and egg whites. Mix rice and egg yolks on a bowl.
In over medium heat pan, melt 1 tablespoon of butter and add 1 teaspoon of olive oil. Add garlic and sautè for 2-3 minutes or until brown. Add white parts of green onions.
Add cooked rice and mix with garlic for 3-4 minutes. Season with soy sauce, black pepper and salt if needed. Stir in green onions. Mix everything until evenly distributed.
Push rice on the side, add 1 tablespoon of butter. Add white eggs and wait for 20 seconds before scrambling egg whites.
Mix eggs and rice together for another 2-3 minutes.
Remove from the pan and place in a serving plate. Garnish with green onion and serve.
