Mango is one of my absolute favourite fruits. They are bursting with flavour and immediately ignite your tastebuds. This Mango Coconut Sago recipe is a delicious and creamy summer treat. It's very simple and incredibly easy to make. Why pay 8 dollars at the store when you can make this recipe in minutes?
Bring water to boil. Add tapioca pearls or sago and simmer for 15-20 minutes until clear and translucent. Stir frequently.
Drain and rinse with cold water.
Blend 1 mango using a blender. Set aside.
In a mixing bowl, combine coconut milk and condensed milk.
Add tapioca pearls/sago and pureed mango. Mix until combine.
Transfer coconut sago mixture into individual cups or bowls. Top with generous amount of fresh cubed mangoes. Add more if you like.
Chill, serve and enjoy!
Notes
mango: I prefer ripe ataulfo mangoes, they are smaller and sweeter.
sago or tapioca: you can find them in asian store. Make sure to buy the small size of sago or "Tapioca Pearls". Cook sago as per packaging instructions.
sweetener: I am using condensed milk. You can also use sugar, honey or maple syrup.
coconut milk: canned, full-fat coconut milk is a must!
