    This Mango Coconut Sago recipe is a delicious and creamy summer treat. It's very simple and incredibly easy to make. Why pay 8 dollars at the store when you can make this recipe in minutes?

    Mango is one of my absolute favourite fruits. They are bursting with flavour and immediately ignite your tastebuds.

    I love smoothies and fruit drinks because they are not only tasty, but they have healthy benefits as well. Mango is an excellent source of magnesium and potassium. And while low in calories, they are still packed with flavour. As soon as you have a piece of Mango, your taste buds are awakened.

The beauty of this Mango Coconut Sago recipe is you can prepare it in a matter of minutes, and it only has 4 ingredients! That's awesome right?     Ingredient Notes

    • mango: I prefer ripe ataulfo mangoes, they smaller and sweeter.
    • sago or tapioca: you can find them in asian store. Make sure to buy the small size of sago or "Tapioca Pearls". Cook sago as per packaging instructions.
    • sweetener: I am using condensed milk. You can also use sugar, honey or maple syrup.
    • coconut milk: canned, full-fat coconut milk is a must!

    Step-by-Step Instructions

    Step 1: Bring water to boil. Add tapioca pearls or sago and simmer for 15-20 minutes until clear and translucent. Stir frequently. Drain and rinse with cold water.

    Step 2: In mixing bowl, combine coconut milk and condensed milk. Using a blender puree mango and set aside.

    Step 3: Add cooked sago and pureed mango. Mix until well combined.

    Step 4: Transfer coconut sago mixture into individual cups or bowls. Top with generous amount of fresh mangoes. Chill, serve and enjoy!

    Ingredients
      

    • 3 pieces mango
    • 5 cups water
    • ½ cup tapioca pearls/sago
    • ¼ cup condensed milk
    • 1 can (400ml) coconut milk

    Instructions
     

    • Bring water to boil. Add tapioca pearls or sago and simmer for 15-20 minutes until clear and translucent. Stir frequently.
    • Drain and rinse with cold water. 
    • Blend 1 mango using a blender. Set aside.
    • In a mixing bowl, combine coconut milk and condensed milk.
    • Add tapioca pearls/sago and pureed mango. Mix until combine.
    • Transfer coconut sago mixture into individual cups or bowls. Top with generous amount of fresh cubed mangoes. Add more if you like.
    • Chill, serve and enjoy!
