Vegetarian Pancit Bihon

Vegetarian Pancit Bihon is a classic Filipino noodle dish that is healthy, simple and easy to make. Pancit Bihon is so versatile you can customize the recipe by adding different kind of vegetables and or meat like pork, chicken or beef.

Ingredients
  

  • 1 lb bihon (rice vermicelli noodles)
  • water, as needed soak bihon in large bowl
  • ½ small green cabbage chopped
  • lb snap peas
  • 1 cup carrots julienned
  • 1 small bell pepper julienned
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 350 grams tofu cut intro strips or cubes
  • 4-5 cups vegetable broth
  • 5 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • salt and pepper to taste
  • scallions
  • olive oil (for cooking)

Instructions
 

  • Place the rice vermicille in a large bowl and soak them with water for 10 minutes. When the noodles are soft, drain and set it aside.
  • In a wok or large pan over medium heat, add oil along with the onion, garlic and red bell pepper. Saute for 3 minutes.
  • Add cabbage, snap peas and carrots. Sautè for about a minute.
  • Add vegetable broth. Stir in oyster sauce, soy sauce and sesame oil. Simmer for 6 minutes or until the vegetables are mostly tender.
  • Add noodles, stir until noodles are cooked through. Toss cooked tofu.
  • Remove from heat, garnish with green onions and squeeze some lemon. Then serve.

Notes

You can skip Sesame oil if you don't have any.
