    Oats Arroz Caldo

    This Oats Arroz Caldo is perfect for rainy and cold weather to keep you warm and cozy. You can also make this Filipino dish at any time of the day.

    WHAT DOES ARROZ CALDO MEAN?

    Arroz Caldo is also known as a Filipino rice porridge and is topped with garlic, green onions, eggs and lime. Filipinos also cook Arroz Caldo with their favourite meat like chicken to make it a "Chicken Arroz Caldo" and pork for "Pork Arroz Caldo". But this recipe is meatless, and rice was replaced with Oats and topped with crispy tofu and cilantro. But all Arroz Caldo uses the same cooking process or method.

    INGREDIENTS NEEDED FOR OATS ARROZ CALDO

    INGREDIENT NOTES

    • Oats: 2 cups of rolled oats.
    • Stock: I used 6-7 cups of vegetable broth
    • Tofu: use extra firm or medium firm tofu, for toppings.
    • Eggs: hard boiled eggs, for toppings.
    • Onion: finely chopped red onion. You can also substitute it with white onion.
    • Garlic: minced and finely chopped. Never skip garlic!
    • Ginger: thumb-sized ginger, minced and chopped. Must haves!
    • Green Onions/Scallions: 2 stalks of green onions. chopped and separate the white portion from green. Green part will be our toppings and white part will be use for sautéing.
    • Cilantro: adds extra flavour for the dish (optional)
    • Spices: salt and pepper to taste.
    • Seasonings: soy sauce. You can also use fish sauce instead.

    STEP-BY-STEP INSTRUCTIONS

    Step 1: In over medium large pot sauté onion, garlic. ginger and white parts of green onions. Stir for 2-3 minutes, make sure not to burn them to avoid bitter taste.

    Step 2 : Add 2 cups of oats and mix them together for about 2 minutes before adding the broth.

    Step 3: Add 6-7 cups of vegetable broth. Add 2 teaspoons of soy sauce. Seasoned with salt and pepper. Mix everything together until fully distributed. Cook the Oats Arroz Caldo for 10-15 minutes.

    Step 4: While waiting for the Oats Arroz Caldo to cook. It is now time to prepare the toppings. In an over medium heat pan fry the garlic and cook for 2-3 minutes or until crispy and golden brown. Once cooked, set it aside.

    Step 5: On the same pan where we make our garlic. Add oil and cook tofu for 4-5 minutes each side. Once cooked, set it aside!

    Step 6: To boil egg. Place eggs in the bottom of a saucepan. Fill the pan with cold water, 1 inch above the egg. Bring the water to boil on a stovetop over high heat. Once the water comes to boil, cover the pan with a lid and remove a pan from the heat. Do not open the lid and wait for 5-8 minutes. Once done, place the eggs in a bowl filled with cold water. Then we are going to add them peeled, sliced and served over the Oats Arroz Caldo together with tofu, garlic, green onion and cilantro.

    • 1 piece shallot finely chopped

    • cilantro finely chopped, for toppings

    • salt and pepper to taste

Once the water comes to boil, cover the pan with a lid and remove a pan from the heat. Do not open the lid and wait for 5-8 minutes. Once done, place the eggs in a bowl filled with cold water. Then we are going to add them peeled, sliced and served over the Oats Arroz Caldo together with tofu, garlic, green onion and cilantro.
