Ingredients Needed
- All Purpose Flour
- Brown Sugar
- Unsalted Butter
- Instant Yeast
- Milk
- Salt
- Grated Coconut/Desiccated Coconut
- Vanilla Extract
Ingredient Notes
- flour: all purpose flour is used for this recipe. Bread flour or Whole Wheat flour will also work.
- sugar: brown sugar is a must.
- butter: unsalted butter or butter is totally fine.
- yeast: we are using instant dry yeast. This type of yeast can be mix directly in the flour. If you are using active dry yeast make sure to follow packaging instructions, active dry yeast typically needs to dissolved in water first.
- coconut: we are using unsweettened desiccated coconut. Rehydrate it with warm water. You can also use freshly grated coconut.
How to make it
Making the Dough
In a large bowl, sift flour, sugar and salt. Add instant dry yeast. Pour in lukewarm water, melted butter and mix using spatula.
Transfer the dough in a flat surface and knead for 5 minutes. Place the the dough in a bowl, cover with cloth and let it set for 2 hours until it doubled the size.
Making the Filling
In a sauce pan, add water, butter, and brown sugar. Stir until sugar is dissolved. Add descicated coconut and vanilla extract. Stir regularly for 2-3 minutes until liquid has reduced. Once done, set it aside. Let it cool before assembling.
Assembling Pan De Coco
Place the dough on a flat surface and divide by three. Then cut them into 4 equal parts for a total of 12 pieces.
Shape each dough into a ball and let it rest for 30 minutes.
Flatten each dough with the palm of the hand. Add coconut filling.
Pinch the corners of the dough to seal the filling.
Bake
Arrange the filled dough, pinched side down on baking sheet. Using a fork, poke small holes in the centre of the dough. Bake in 175 Celsius for 10 minutes. Remove from the oven and brush with egg wash. Bake for another 5 minutes or until golden brown.

Ingredients
Making the Dough
- 2 cups flour
- ¾ cup sugar
- ¼ cup butter melted
- ¾ cup milk
- 1 teaspoon instant dry yeast
- ¼ teaspoon salt
Coconut Filling
- 1½ cup desiccated coconut
- ½ cup water
- 2½ tablespoon butter
- ½ cup brown sugar unpacked
- 1 teaspoon vanilla extract
Egg Wash
- 1 piece egg beaten
Instructions
- In a large bowl, sift flour, sugar and salt.
- Add instant dry yeast. Pour in lukewarm milk and melted butter.
- Using a wooden spoon, spatula or by hand mix everything until it sticks together or form a dough.
- In a flat surface knead the dough for 5 minutes. If it is too sticky, apply some oil to your hand. Or add little bit of flour at a time until the dough comes together. Cover with damp towel and place in a warm spot for 2 hours or until It has doubled it size.
- Meanwhile, prepare the filling. In a sauce pan, combine water, butter and brown sugar. Add coconut.
- Add vanilla extract and stir occasionally for 3-5 minutes until liquid has thickened. Set it aside.
- After the dough has proofed for 2 hours. Tip the dough to a flat surface and form a rectangular.
- Cut the dough lengthwise in 3 equal parts. Then crosswides divide by 4 equal parts for a total of 12 pieces.
- Shape each piece into a ball and let it rest for another 30 minutes.
- Flatten the dough with palm of your hand.
- Add 1 tablespoon of coconut filling in the middle of the dough.
- Pinch the corners of the dough and roll it in between of your palms to seal the filing.
- Transfer and arrange the filled dough to a parchment line baking sheet and cover with clean kitchen towel. Allow to rise for another 10 minutes.
- Bake in a preheated oven at 175 degrees celsius for 10 minutes. Remove the baking tray with buns on it and rub egg wash. Return to the oven and bake for another 10 minutes or until turns golden brown.
