    Peach Mango Bread Pie

    This Peach Mango Bread Pie is crunchy and crispy on the outside but soft and filling on the inside. Make this easy yet tasty home-made snack in less than 30 minutes. This yummy snacky ala Jollibee Style is very affordable as we only use bread for our pastry.

    WHAT IS PEACH MANGO BREAD PIE?

    Peach Mango Bread Pie is simply Peach Mango Pie that is a famous dessert from Jollibee (fast-food chain) in the Philippines. This dessert is truly delicious and addicting. The filling just melts in your mouth. The combination of Peach and Mango is just so perfect, I call them perfect "duo". The crispiness and sweetness makes you want more especially when they're hot. I warn you to be careful when you're eating them, I burned my tongue probably a million times from biting into these when I couldn't wait any longer.

    INGREDIENT NEEDED FOR OUR PEACH MANGO BREAD PIE

    • Bread: I used White Bread or Slice Bread for this recipe. Stale bread would also work, I mean why not?
    • Mango: Ripe or Overripe is a MUST otherwise If you use underripe it's going to change the taste as it's a bit sour. For mango, feel free to use any type of mango. I used Alphonso mango, that's only available in the store.
    • Peach: I used canned peach and I cut them into cubes.
    • Breadcrumbs: This is where the crispy part comes from. Corn flake breadcrumbs would also work for this recipe.
    • Eggs: Eggs is mandatory as it will hold the breadcrumbs. This also gives extra crisp for the pie.
    • Cinnamon: The scent of cinnamon has spicy and sweet fragrance for the pie.
    • Sugar: This is where the sweetness comes from. White Sugar is needed for this recipe. The reason I don't add brown sugar is because it changes the colour.
    • Cornstarch: This will create the sticky consistency for our filling.
    • Rolling Pin: This will flatten the bread. However, if you don't have rolling pin at home, you can use a water glass to flatten the bread.

    STEP-BY-STEP INSTRUCTIONS

    1. In over medium heat pan, add peach, mango, sugar and cinnamon. Add dissolved cornstarch. Stir for 3-5 minutes until softened or thickened like a jam. Once done, set it aside and let it cool at room temperature.
    2. Prepare the pastry, slice off the bread crust and flatten the bread using rolling pin. Scoop 1 tablespoon and place on to the bread , fold, use fork to seal the pie. See below pictures.

    Ingredients
      

    • 8-10 pieces white bread
    • 1 cup mango cubed
    • 1 can peach cubed
    • 3 tablespoon sugar
    • ¼ teaspoon cinnamon
    • 1 teaspoon cornstarch dissolved
    • breadcrumbs
    • 3 eggs beaten

    Instructions
     

    • In over medium heat pan, add peach, mango, sugar and cinnamon. Add dissolved cornstarch. Mix together until softened and thickened like a jam. Set it aside and let it cool in room temperature.
    • Slice off the bread crust (the brown part of the bread) and flatten them using rolling pin.
    • Scoop and place 1 tablespoon on the flattened bread. Fold half, press and seal using fork.
    • Coat the pie with eggs and next to breadcrumbs. Set it aside.
    • In over medium pan. Add oil and deep fry the pie until golden brown. Don't burn yourself when you eat them. Enjoy!

    Notes

    Make sure to slowly press the fork when sealing the bread.
