What is Maja Blanca?

Maja Blanca is something you will definitely find in the Philippines at Christmas time and during fiestas. They are made with coconut milk, evaporated milk, sugar, cornstarch and corn.

This is definitely one of my favourite Filipino desserts. Top with crushed roasted peanuts for extra crunch!

Simple Filipino Dessert

Maja Blanca is a simple, yet delicious Filipino dessert to make at home. It only requires 5 simple ingredients.

The mixture of coconut milk, evaporated milk, sugar, corn and a cornstarch slurry is cooked in low heat until it reach into a custard-like texture.

Ingredients Needed

  • coconut milk
  • evaporated milk
  • sugar
  • cornstarch
  • corn
  • cream style corn

How to make Simple Maja Recipe

Combine, coconut milk, evaporated milk and sugar In a pot. Bring it to boil until sugar dissolved. Add corn and cream of corn and stir for about 2-3 minutes.

Dissolve cornstarch with water.

Stir in dissolved cornstarch and whisk occasionally to prevent lumps.

Continue to stir until mixture is thickened. Transfer the mixture to a greased pan and top with crushed roasted peanuts.

Key Tips

  • Use a Non-Stick pan In making the Maja Blanca, it will prevent the mixture from the bottom of the pan and making it easier to stir.
  • Stir maja constantly to prevent lumps form forming and will cook evenly.
  • Chill in the fridge for 3 hours or more before serving. This will help to firm making it easier to slice.

Store

To store, transfer the mixture in container with lid cover or cover it with plastic wrap and place in the fridge. This will last for 4-5 days. Before serving, you can sprinkle some crushed peanuts to add more texture and flavor.

Ingredients
  

  • 1 (400ml) can coconut milk
  • 1 (354ml) can evaporated milk
  • 1(341ml) can corn drained
  • 1 (398ml) can cream style corn optional
  • ¾ cup sugar
  • 1 cup cornstarch
  • 1 cup water use to dissolved cornstarch

Instructions
 

  • Combine, coconut milk, evaporated milk and sugar In a pot. Bring the mixture to boil until sugar is dissolved.
  • Add corn and cream style corn and stir for about 2-3 minutes.
  • Meanwhile, dissolve 1 cup cornstarch with 1 cup of water.
  • Add dissolved cornstarch over the mixture and stir.
  • Continue stir your mixture until thick like pudding or until you get the consistency you want. This usually takes about 6 minutes. Just remember that the maja will continue to set as it cools.
  • Transfer the maja mixture into greased pan and allow it to cool. Top with crushed roasted peanuts and serve!

Notes

  • Number of servings/Yields depends on how big or small you cut your maja.
  • Grease pan with oil or butter before transferring the maja mixture over. 
  • Sugar can be adjusted to ½ cup instead of ¾ cup if you don't want it too sweet. 
  • This recipe uses 13x9 baking dish.
