What are Ube Cupcakes?
Ube Cupcakes are a type of dessert featuring the vibrant purple color from Ube which is purple yam, commonly used in Filipino cuisine. The ube extract is added to the cupcake batter resulting in a beautiful deep purple hue.
Ingredients Needed
- Flour: This recipes uses All purpose flour.
- Ube Extract: Ube is the key ingredient for this recipe providing the distinct purple color and nutty flavour. We are using the ube extract. You will find them in any asian store.
- Baking powder: This helps the cupcake rise and achieved the fluffy texture. Make sure to use Baking powder not Baking soda.
- Butter: Unsalted butter (at room temperature), it adds richness to cupcakes.
- Sugar: Granulated white sugar, this is where the sweetness comes from.
- Eggs: We need 2 eggs.
- Milk: Whole milk works fine.
- Salt: A pinch of salt to balance the sweetness.
How to make it
Step 1. Cream butter and sugar. In bowl cream together softened unsalted butter and sugar until light and fluffy.
Step 2. Add wet ingredients. Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed. Add ube extract and stir until well combined.
Step 3. Combine dry and wet ingredients. In a separate bowl, whisk together the flour, baking powder, and salt. Add dry ingredients to wet ingredients.
Step 4. Fill cupcake liners. Line a muffin pan with cupcake liners. Pour the batter into each liner until they are ⅔ full.
Step 5. Bake. Bake for about 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

- Do not over mix the batter, for smooth and fluffy cupcakes.
- Do not substitute ube extract for purple colouring as ube extract has a nutty taste to achieve ube flavour.
- Fill muffin liners about ⅔ full , do not overfill as they rise when baking.
- Cool cupcakes completely before decorating or frosting to prevent them from melting.
Storing
Once Ube Cupcakes (without the frosting) are cooled down, place them in an airtight container and store in the fridge for 3-4 days.

Overbaking and adding too much flour resulting them to become dry. Make sure to use all purpose flour for this recipe and measure accurately.
Unfortunately, I have never tried ube powder. I recommend for you to use ube extract when making this recipe.
