This Ube Brownies are made with pure purple yam. I just love this purple colour, what a beauty! Purple Yam Sweet Potatoes taste different from just normal yam. They have a denser texture, slightly nuttier and sweeter. Above all, I really fall in love with the colour.

Ingredients Needed
INGREDIENT NOTES
- Ube/Purple Yam: I am using pure Ube/Purple Yam and mashed them. You can also buy Ube Jam at Filipino or Asian Store instead. You can also use ube extract for deep ube flavor.
- Butter: for this recipe, we are using unsalted butter.
- Flour: all purpose flour is used for this recipe.
- Chocolate: topped with melted chocolate chips for chocolatey flavour. This is optional but I suggest to add it.
- Sugar: granulated white sugar, brown sugar or coconut sugar will work fine. For this recipe, we are using white sugar. If you are using Ube Jam, sugar should be adjusted because the jam is already sweet.
- Salt: to balance the sweetness.
How to make it
First, we make Ube or Purple Yam puree by boiling them in 30 minutes or until soft and tender. Once cooked, remove the skin and mash. You can also use food processor instead of masher.
In a mixing bowl, add wet ingredients. Combine butter, eggs and vanilla extract first. Then add mashed ube/purple yam.
In a separate bowl, mixed dry ingredients flour, sugar, baking powder and salt. Stir in dry ingredients gradually over wet ingredients. Mix everything until evenly distributed.
Add the batter to a preferred pan and bake for 15 minutes.
Lift the ube brownies out of the pan using the edges of the parchment paper. Add melted chocolate on top for chocolatey flavour. Let it cool and slice into 9 brownies. Share and enjoy!

Ube Brownies
Ingredients
- 1 cup ube mashed
- ½ cup unsalted butter melted
- 1 cup flour
- ¾ cup sugar
- 2 pieces eggs beaten
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- pinch of salt
- ⅓ cup chocolate chips melted
Instructions
- To make ube/purple yam puree, boil ube for 30 minutes or until tender. Peel, cut them into cubes and mash using a masher or food processor.
- In a mixing bowl, combine wet ingredients; butter, eggs and vanilla extract.
- Add mashed ube/purple yam and mix everthing together.
- In a separate bowl, combine dry ingredients; flour, sugar, baking powder and salt. Gradually add the dry ingredients over wet mixture.
- Add the batter to a baking pan and bake on a pre-heated 375 F oven for 15-20 minutes or until toothpick inserted in the centre came out clean.
- Lift the ube brownies out of the pan using the edges of the parchment paper. Add melted chocolate on top for chocolatey flavour. Let it cool and slice into 9 brownies. Share and enjoy!

These turned out great, but I altered the recipe a little. I used powdered and rehydrated ube instead of fresh, for starters.
I ended up adding chocolate chips to the batter, and I whipped up some cream cheese frosting to top it off.
Fyi these brownies are a bit more like a cake, than a brownie, in my opinion. So the frosting really made the difference.
