    Ube Chocolate Chip Cookies

    Looking for fun new Ube recipes? Try these delicious Ube Chocolate Chip Cookies for a sweet treat.

    Who doesn't love cookies? These cookies are wonderful because you receive the vitamins and minerals of the purple yam, along with that chocolatey goodness. The added sweetness from the Chocolate Chips is just a perfect match.

    Let's not forget, they are purple! Willy Wonka himself would approve.

    The Amazing Ube

    I have been sharing a lot of Ube recipes on the blog recently. It's really fun to dream up new ways of using this Purple Yam. It's not really as sweet as it's relative the sweet potato Yam, so coming up with different ways to subvert the expectations of your taste buds is really fun.     Ingredients Needed

    • Flour: we are using all purpose flour.
    • Purple Yam: you can find them by sweet potato section. Boil and mashed. You can also substitute purple yam with ube jam.
    • Ube Extract/ Flavouring: this gives the deep purple color and ube flavour. You will find them in Filipino or any Asian store.
    • Chocolate Chips: I am using semi sweet chocolate chips. You can also use white chocolates If you want.
    • Sugar: white and brown sugar.
    • Butter: unsalted butter. If you are using salted butter then no need to add salt.
    • Baking Soda: make sure to use baking soda not baking powder.

    Step-by-step Instructions

    Step 1. Mix dry ingredients including flour, salt and baking soda.

    Step 2. Combine wet ingredients includes butter, brown sugar, white sugar, ube extract, vanilla extract, egg and mashed purple yam.

    Step 3. Add flour over the wet ingredients and mix well using spatula.

    Step 4. Add chocolate chips and mix until evenly distributed. Cover and let it sit on the fridge for 30 minutes.

    Step 5. Preheat oven to 350 degrees. Place a parchment paper over baking tray. Scoop about 1 ½ tablespoon of cookie dough onto baking sheet lined with parchment. Make sure there's 2 inches space between each cookie.

    Flatten each cookie slightly using hand. Bake for 10-12 minutes until edges are lightly brown.

    Let the cookies cool on baking tray for 20 minutes until firm and then enjoy!

    Ingredients
      

    • 1¼ cup flour
    • ½ cup chocolate chips
    • ¼ cup purple yam boiled and mashed
    • ½ teaspoon baking soda
    • ½ cup unsalted butter melted
    • ¼ cup brown sugar
    • ¼ cup white sugar
    • 1 large egg
    • ½ teaspoon ube extract
    • ½ teaspoon vanilla extract

    Instructions
     

    • Combine the dry ingredients includes all purpose flour, baking soda and salt. Set it aside.
    • In a separate bowl, combine butter, egg, ube extract, vanilla extract, brown sugar, white sugar and purple yam. Mix well until combine.
    • Add dry ingredients from step 1 over wet ingredients. Using a spatula combine them until evenly distributed.
    • Add chocolate chips and mix. Cover and let it sit on fridge for 30 minutes.
    • Preheat oven to 350 F (180) and line a baking sheet with parchment paper.
    • Scoop about 1½ tablespoon of cookie dough onto the lined baking tray. Bake for 10-12 minutes until the edges of the cookies are lightly brown.
    • Let cool on the baking tray for at least 10 minutes. Share and enjoy!
