What are Ube Bars?
Ube Bars are a famous filipino snack and dessert that are made with pure purple yam, coated with ube syrup and rolled into desiccated coconut or shredded coconut. The cake is so soft and the ube taste is so irresistible. The Ube Syrup is made with condensed milk and ube extract or flavouring.

- flour: I am using all purpose flour.
- butter: unsalted butter was used for this recipe. If you are using salted butter no need to add salt.
- milk: this recipe uses 2% milk.
- sugar: white sugar or coconut sugar works fine for this recipe.
- condensed milk: sweetened condensed milk for the ube syrup.
- ube: I am using ube flavouring.
Step-by-step Instructions
Step 1: Prepare The Cake
In a mixing bowl, add butter and sugar. Mix using electric mixer until smooth.
Add flour, baking powder, milk, and vanilla. Mix in a medium setting. Do not over mix.
Pour the batter into the baking pan and spread evenly.
Bake for 30 minutes or until a toothpick inserted in the centre comes out clean.
Step 2: Ube Syrup
In medium pan, add condensed milk and water. Bring it to simmer. Add the ube flavouring and mix well until evenly distributed.
Step 3: Assembling Ube
Take a piece of a cake bar. Dip them in the ube syrup then roll in desiccated coconut. Repeat for all the bars. Let it dry and serve.
Store
Place the ube bars in an airtight container and store in refrigerator. Best consumed with in a week.

Ingredients
For Cake
- ¾ cup sugar
- ½ cup butter softened at room temperature
- 1 cup milk
- 1 piece egg
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
Ube Syrup
- 1 10-oz can sweetened condensed milk
- 1 teaspoon ube flavouring
- ¼ cup water
- desiccated coconut
Instructions
Prepare the Cake
- Preheat oven to 350 °F/180 °C. Place foil or parchment paper over 8 inch (20 cm) square cake pan.
- In a mixing bowl, add butter and sugar. Mix using electric mixer until smooth.
- Add the rest of ingredients, vanilla extract, eggs, flour, baking powder and pinch of salt. Mix in a medium setting until well combined and blended. Do not over mix.
- Pour the batter into the baking pan and spread evenly.
- Bake in a preheated 350° F for 30 minutes or until a toothpick inserted in the centre comes out clean.
- Remove from the oven and let it cool for 10 minutes before slicing it. Once cool, cut the cake into half then into smaller bars.
Ube Syrup
- Meanwhile, in over medium pan, stir in condensed milk and water. Add ube flavouring and mix until well blended.
- Transfer to a flat and deep container and let it cool before assembling. Place desiccated coconut in a separate plate.
Assembling Ube Bars
- Take a piece of a cake bar. Dip them in the ube syrup then roll in desiccated coconut. Repeat for all the bars. Let it dry and serve.
