Ube Bundt Cake

This moist glazed Ube Bundt Cake will turn heads with it's eye catching purple color. Made with less than 10 ingredients and surprisingly easy to make.

I have been wanting to make this dessert for awhile now. And I'm so happy I did because it turns out good and everyone loves it. If you are looking for dessert to make this coming Christmas and New Year this one is worth to try.

I have been sharing Ube Recipes on the blog lately. Ube is known as Purple Yam it is very popular in the Philippines or in Asia. You can cook Ube in many different ways like as desserts, smoothies or even in a soup. However, this recipe uses the Ube Extract/Flavouring as the main ingredient they have distinct Ube flavour.

Ube Bundt Cake with glazed

Ingredients Needed

ingredients needed for ube Bundt Cake
  • Flour: we are using all purpose flour for this recipe.
  • Cornstarch: for extra moist.
  • Sugar: granaluted white sugar.
  • Butter: unsalted butter.
  • Ube Extract: you can find them in Asian Store. Or can be ordered through Amazon.
  • Baking Powder: cannot substituted with baking soda.
  • Milk: almond or regular milk. I am using 2% milk for this recipe.

Step-by-step Instructions

Step 1. Beat butter in mixing bowl until smooth and creamy. Add sugar and beat another 2-3 minutes until light and fluffy.

Step 2. Add first 2 eggs one at a time then mix. Wait till the egg is absorb into the mixture. Add 2 more eggs then beat again in a medium setting.

Step 3. Add vanilla and ube extract then continue beating until fully mixed in.

Step 4. Combine flour, cornstarch, baking powder and salt in separate mixing bowl. Add half of dry ingredients into ube mixture. Pour in milk and mix until fully incorporated, then add remaining dry ingredients and stir until just combined. 

Step 5. Transfer the mixture to a greased Bundt pan and bake at 350 F for 35-45 minutes or until toothpick inserted comes out clean.

Ingredients
  

  • 3 cups Ap Flour
  • 4 tablespoon cornstarch
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups sugar
  • cups unsalted butter softened
  • 4 larges eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoon ube flavouring
  • 1 cup milk

Glazed

  • cup powdered sugar
  • ½ teaspoon vanilla extract
  • 5 tablespoon milk
  • pinch salt

Instructions
 

  • Preheat oven at 350 F.
  • Grease a 12-cup bundt pan with cooking spray.
  • Beat butter in mixing bowl until smooth and creamy. Add sugar and beat another 2-3 minutes until light and fluffy.
  • Add first 2 eggs one at a time then mix. Wait till the egg is absorb into the mixture
  • Add 2 more eggs then beat again in a medium setting.
  • Add vanilla and ube extract then continue beating until fully mixed in.
  • Combine flour, cornstarch, baking powder and salt in separate mixing bowl.
  • Add half of dry ingredients into wet ingredients. Add milk then mix until combined.
  • Add remaining dry ingredients and stir until just combined. 
  • Transfer the mixture to a greased Bundt pan.
  • Bake at 350 F for 35-45 minutes or until toothpick inserted comes out clean. 
  • Let it cool in a pan for 10 minutes, then invert onto a cooling rack to cool completely. 
  • Make glaze: Whisk together powdered sugar, milk, vanilla, and salt. Pour over cake and serve.
