    What is ube?

    Ube, also known as purple yam, is a type of yam that is native to the Philippines and other parts of Southeast Asia. It is a root vegetable that grows underground and has a distinctively bright purple color on the inside.

    Ube has a sweet, nutty flavor and is often used in desserts such as cakes, pastries, and ice cream. It has become increasingly popular as more people discover its unique flavor and vibrant color.

    It is available in various forms, including fresh, frozen, or as a sweetened jam called ube halaya.

    What you'll need

    ingredients needed for 3 ingredient ube ice cream
    • whipping cream: 1 cup of cold heavy whipping cream.
    • condensed milk: this is where the sweetness comes from.
    • ube: we are using vanilla extract or flavouring. You can find them in Amazon or any Asian store.

    How to make it

    Step 1. Pour heavy whipping cream in a bowl. Whip using electric hand mixer until soft peaks.

    Step 2. Add condensed milk and continue whipping until the mix holds stiff peaks.

    Step 3. Pour in ube flavouring and stir until fully incorporated.

    Step 4. Transfer ube ice cream into a freezer safe container with lid.

    • Use Cold Heavy Cream and Condensed Milk: It's important to use cold ingredients to help the mixture freeze more quickly and evenly. Make sure your heavy cream is chilled before you begin.
    • Whip the heavy cream until stiff peaks form: This will ensure that your ice cream is light and airy, with a smooth and creamy texture.
    • Do not over mix! Over mixing can result in a loss of air and a denser, less creamy texture.
    • Ube Flavouring /Extract is a must!

    • 2 teaspoons ube flavouring

    Instructions
     

    • Pour heavy whipping cream in a bowl. Whip using electric hand mixer until soft peaks about 3-4 minutes. Add condensed milk and continue whipping until the mix holds stiff peaks. Add ube flavouring and whip until fully incorporated.
    • Pour the mixture into a freezable container with lid. Freeze until the ice cream is scoopable, at least 6 hours and up to overnight. For best results, take the ice cream out of the freezer a few minutes before you want to scoop it.
