This Healthy Filipino Beef Tapa is very easy to make. For this version I used Soy curls, which replicate the taste and texture of meat quite nicely. High in protein and tasty, try this recipe for breakfast, lunch, or dinner!
Tapa is one of the most popular breakfast dishes in the Philippines. It is usually made with thinly sliced beef, chicken or pork, then served with garlic fried rice and eggs.
This dish brings a lot of memories to me. When I was working in the Bank 6 years ago in the Philippines, my Mother would occasionally buy this dish at Jollibee (The famous Filipino Fast Food Chain) and have it delivered to my work place with hot chocolate of course.
Also when I was in college, the restaurant outside my school would always have dish in their menu.
What is Beef Tapa?
Filipino Tapa is a type of cured and thinly sliced beef, pork and chicken. Filipino prepares Tapa by using thinly slices of meat and marinade them with spices such as soy sauce, lemon juice, vinegar, salt and pepper for over night.
In recent years, people have come up with different version of this dish. Here is mine! a healthy version of Beef Tapa, i used 2 cups of Dried Soy Curls for this recipe.

Healthy Filipino Beef Tapa
Ingredients
Marinade Beef Tapa (Soy Curls)
- 2 tablespoon tamari soy sauce
- ½ tsp garlic powder
- ½ teaspoon black pepper
- 1 teaspoon mushroom oyster sauce
- ½ teaspoon lemon juice or kalamansi
Cooking Beef Tapa(Soy Curls)
- 1 tbsp vegetable oil
- 1 medium onion thinly sliced
- 1 tablespoon tamari soy sauce
- 1 tablespoon vinegar
- ⅓ cup vegetable broth or water
- brown sugar
Garlic Fried Rice
- 1 teaspoon vegetable oil
- 3 gloves garlic minced
- 2 cups cooked rice white plain rice
Instructions
- Rehydrate soy curls in hot water and cover lid for 10 minutes. Once soy curls are softened, drain the liquids and press the soy curls to remove excess water using the strainer.
- On the separate bowl mix all the ingredients as listed above to marinate the soy curls. Make sure to stir them properly until spices are well distributed. Leave it for 30 minutes and more in refrigerator . In my case, I marinated them for 30 minutes only and still good.
- In a medium heat skillet,sauté onion and wait till translucent. Remove soy curls out of the fridge. Toss the marinated soy curls into the skillet and stir until brown. Add tamari soy sauce, vinegar( filipino datu-puti), vegetable broth and sugar. Cook for 10 minutes.
Garlic Fried Rice
- Once the Beef Tapa(soy curls) is cooked removed them on the skillet. On the same pan, sauté garlic and wait till brown. Add cooked rice (white or brown rice is fine) and toss a little bit of salt and pepper and mix. Fry until rice slightly turns brown.Set aside.
Vinegar Dip
- I used Datu Puti Pinakurat(you can find them in Asian store or International section).Add onions, tomatoes and thai peppers.

So good! The soy curls actually have a great taste and texture, it doesn’t seem like it’s but meat !
