    What is fishball sauce?

Fishball sauce is a savory and tangy condiment commonly used in Asian cuisine, particularly in the Philippines. It is typically a thick, dark-colored sauce with a sweet, sour, and slightly spicy flavor.

You will usually find this fishball sauce recipe as a side provided by street vendors. It is commonly served as a dipping sauce for fish balls, squid balls, tempura and kwek kwek. Yummm!

This homemade fishball recipe is inspired from Manong's sauce, "Manong" or "Kuya" is a Filipino term used to address an older male to show respect.

    Ingredients needed

    ingredients for fishball sauce
    • soy sauce: this recipe uses regular soy sauce.
    • flour: this is used to thicken the sauce. You can substitute it with cornstarch.
    • sugar: I am using brown sugar for this recipe. This gives it that rich dark colour.
    • chili or siling labuyo: finely chopped. You can also use chili flakes for this recipe.
    • garlic: about 2 minced garlic for garlicky flavour.
    • salt and pepper: to balance the sweetness.
    • water

    How to make it

Step 1. In a small saucepan, combine soy sauce, water, brown sugar, minced garlic, salt and pepper, and flour. Stir to mix the ingredients together.

mix soy sauce, sugar, water until well combined to make smooth sauce

Step 2. Bring the mixture to a gentle simmer about 3-4 minutes, stirring occasionally to dissolve the sugar and allow the flavors to meld together.

To serve simply place the sauce in a cup or bowl and serve it alongside or dip the cooked and warm fish balls directly over the sauce.

    Tips

If you want or interested to make Fish Ball sauce at home. Here's some tips to help you achieve a delicious and authentic flavor.

    • Adjust the amount of sugar in your sauce to achieve the desired level of sweetness that suits your taste buds.
    • If you like a bit heat of your sauce, you can add more chili flakes.
    • To achieve a thickened sauce simmer it on low heat.

Before storing the sauce, make sure it has cooled down completely. Once it has cooled down, transfer to glass jars or plastic containers with tight-fitting lids and store in the fridge for 4-5 days.
