These Filipino Fresh Lumpia are a refreshing and mouthwatering appetizer that everyone will love. They are healthy and delicious, filled with vegetables and served with homemade peanut sauce. Fresh Lumpia is very popular in the Philippines and you will find them in any restaurant.

Most restaurants have this dish on their menu. But why not make it at home? With a few simple tricks you will learn how to easily make them at home, especially preparing the crepes without tearing them apart. And of course, don't forget our peanut sauce that is ready in less than 5 minutes.
INGREDIENTS NEEDED FOR FILIPINO FRESH LUMPIA
- Vegetables:The vegetables that we are using for the filling are lettuce, cabbage. sweet potato and carrots. You can customize them by adding bean sprouts, potato and tofu. But I would like them to keep it simple.
- Seasonings: The common seasonings for fresh lumpia are soy sauce and fish sauce (this can be replaced by oyster sauce and can be omitted if vegetarian). And of course, salt and pepper.
- Peanut Butter: Fresh Lumpia is always served with a toppings of crushed peanuts. And it makes a lot of sense to add peanut butter to our sauce. The usual Filipino Fresh Lumpia does not add peanut butter when making the sauce. I would recommend to add, as it gives more peanut flavour to the sauce. Sweetened peanut butter was used for this recipe.
- Wrapper or Crepes: In making Filipino fresh lumpia wrappers, we need flour, eggs, nutritional yeast (optional), water, oil and pinch of salt. Tip: is to refrigerate the mixture for one hour before making them.
- Nutritional Yeast: I added this on making our wrapper. Fresh Lumpia does not use nutritional yeast but I really like the taste of it. I like the cheesy like taste. This is totally optional and can be omitted if you don't have it. By the way nutritional yeast is different from Baker's yeast. It is used in cooking and has a cheesy flavor.
- Cornstarch: This is where the sticky glazed made from our peanut sauce.
- Sugar: This is where the sweetness comes from when making the peanut sauce. I used brown sugar for this recipe. You can substitute them with white sugar or honey.
- Vegetable Broth: Feel free to use you preferred stocks if you are not vegetarian. It can be substituted with chicken stock or beef stock. You can find them in any grocery store.
STEP-BY-STEP INSTRUCTIONS
- HOW TO COOK VEGETABLE FILLING. In over medium heat pan, add oil, add onion and garlic sauté for two to three minutes. Add chopped sweet potato. Add vegetable broth and bring it to boil. Once sweet potato is half cooked, add carrots and cabbage. Seasoned with soy sauce, oyster sauce, salt and pepper. Simmer for five to six minutes or until vegetables are soft and tender. Set it aside, let it cool and drain the excess water.
- HOW TO MAKE WRAPPER OR CREPES. Whisk together the beaten eggs, water, nutritional yeast, flour, vegetable oil, and a pinch of salt. You can cook them right after you mix them together. But I refrigerate the mixture for one hour. In over medium heat non-stick pan, melt butter, add ⅓ cup of the mixture or you can add more if you want bigger. Swirl the pan around to cover the surface. This will take about two minutes. Flip and cook the other side for another two minutes. Keep an eye for the crepes when cooking as we don't want them crispy.
- HOW TO MAKE PEANUT SUACE. In a small pan, add butter and garlic. Saute until garlic is slightly brown. Add two cups of vegetable broth. Add soy sauce, oyster sauce and brown sugar. Slowly bring to boil for about two-three minutes. Add peanut butter and stir. Scoop ¼ cup and mix with cornstarch until dissolved. Pour dissolved cornstarch into the pot and bring back to boil. Stir for two to three minutes or until sauce has thickened.
- HOW TO ASSEMBLE FRESH LUMPIA. Take a lettuce leaf, (remove the hard white parts) and place or lay on the top of the crepes or wrappers. Add vegetables filling, fold the lower part of the wrapper and gently roll. Drizzle with peanut sauce and top with crushed peanuts. Be careful when rolling the wrapper as we don't want to tear them. Ingredients
FRESH LUMPIA FILLING
- 7-8 pieces lettuce
- 1 medium carrots julienned
- 1 cup sweet potato cubed
- 2 cups cabbage chopped
- 1 small onion chopped
- 3 gloves garlic minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- salt & pepper to taste
- ¾ - 1 cup vegetable broth for cooking sweet potato
- 1 tablespoon oil for cooking
FRESH LUMPIA WRAPPER OR CREPES
- 1 cup flour
- 1 tablespoon nutritional yeast optional
- 2 beaten eggs
- 1½ cup water
- 1½ tablespoon vegetable oil
- pinch of salt
- butter for cooking
PEANUT SAUCE
- 2 cups vegetable broth
- 2 gloves garlic minced
- 3 tablespoon cornstarch
- 1 tablespoon soy sauce
- 1 tbsp oyster or fish sauce
- 3 teaspoon peanut butter
- 2 tablespoon brown sugar
- 1 teaspoon butter for cooking
- crushed peanuts for garnish
